Non-stodgy healthy winter food ideas?!

So it's too cold for salad but I don't want to resort to stodge.

DH would happily live on 'brown' food and mash for hte next 4 months (actually he makes incredible mash, I could too but I'd be the size of a house by March!).

Spicy things with rice become my default, but I need some healthier options. What does everyone have as their favourite healthy-ish, affordable-ish dinners in the winter?

Spicy things can be healthy.

I’m veggie and eat loads of vegetable chilli, curry and lentil daals, also spicy tomato pasta sauce with roasted vegetables. Tagines with chick peas and served with cous cous are really nice too.

I make lots of curry and rice too.
Dahl and veg curry or combinations such as chicken and spinach or chicken and sliced peppers.
Lots of casseroles and stews are quite healthy. Add lots of veg.

I have found very small portions of the traditional more stodgy element of a meal (shepherd's pie or toad in the hole for example) with lots of green vegetables, say green beans and peas makes the meal feel much more balanced.

Plus mixing potato with sweet potato or swede for the mash makes it a bit less starchy too.

I go for lean meat or fish with lots of comforting sides, that aren’t as heavy as they seem. A lot of deep, earthy flavour sand variety.

Mash roots together e.g. carrots and celeriac, carrots and swede

Roast red onions are very comforting. Small ones peeled and roasted whole are great. Or make a sort of chutney by reducing down red onions in a little bit of olive oil. Add a spoonful of balsamic vinegar close to end.

Bake layered potatoes with stock rather than butter/cream/cheese. Can layer in thinly sliced roots too.

Puy lentils cooked in stock as a side. Goes really well with the red onion compote.
