Sunday Roast veg Inspiration needed!!

Am about to shop for our Sunday roast vegetables- already got the pork joint out of the freezer. I always seem to cook the same vegetable dishes with my roasts and would love some new ideas. Here’s what I do -carrots, cauliflower cheese, green beans, roast potatoes... please tell me what your favourite Sunday veg dishes are so I’m not doing these for another ten years, yummy though they are.

Creamy leeks with bacon..

Fry some lardons in butter/oil until starting to colour, add sliced leeks...soften then add a little water/white wine and cook until leeks are cooked...add a spoon of creme fraiche and a little salt/pepper.

I love beetroot. Roasted with honey and balsamic. If you buy them cooked and vacuum packed all the easier!

Roasted carrots (fairly chunky bits) with cumin seeds.
Honey glazed roasted parsnips.

Realise you have eaten your tea but now . I bought a tray bake of roasted winter veg from Aldi today ( it was half price.) It had carrots parsnips , onion and beetroot. I wasn’t mad keen on the beetroot but would put the onion in again. I do sprouts - steam them the fry with bacon , depending on dish serve or reduce cream. Sweet potatoes for a change, cabbage but with loads of gravy

Reminds me when I recommended roast artichoke to newly vegetarian friends. They roasted globe artichokes - reported it as a strange eating experience.

Mmm ... would love a roast Jerusalem artichoke with soon to be served spinach and blue cheese quiche roast.

Red cabbage slowly braised with a drop of water and splash of red wine vinegar. Chestnuts and/or fried bacon optional.

Nothing in this world has ever made us as gassy as Jerusalem artichokes.

Globe artichoke on the other hand is one of my firm favourites.

Pot roast beef today with onions, garlic, potatoes, carrots and celery all malty and soft in there

Sides are:
Broccoli, leeks and cabbage par boiled, then fried in butter
Stuffing balls
Roasties (aunt Bessie's 🙈)
Yorkshires

I like asparagus and grilled tomatoes with beef, cauliflower cheese or daughinouse potatoes or a gratin of some kind with lamb or pork, Brussels sprouts with bacon and pigs in blankets with a chicken, gammon cooked with apples and onions and served with skins on mash with spring onions and cheddar cheese in it

Also roasted veg such as peppers, courgette, red onion, butternut squash and sweet potato I will put as a side with anything

Likewise anything to do with buttered greens of any kind.
Also love stewed Red cabbage with or without raisins.

Mushrooms and onions in gravy are a nice addition.

Broccoli, tender stem broccoli, carrots, cauliflower and sweetcorn I'll put with anything.

Swede and carrot mash or variations.
Colcannon.

Another vote for red cabbage. Here we cook with raisins, a cooking apple, white wine vinegar and a spoonful of sugar.

I don't have much to add, but roast swede chunks are very good and far fewer calories than potatoes, if you care at all.

Jerusalem artichokes roasted around a chicken are heavenly. (But it may just be me that finds the after effects funny!)

I Would Like to Know -
so you buy the vacuum packs of beetroot, with no vinegar, and roast those? Please tell me more!

@RemusLupinsBiggestGroupie Yep, just buy them vacuum packed. Then slice into wedges, then coat in some honey and balsamic and into the oven for 30/40 mins till the edges start to caramelise! Gorgeous. And effortless.

My go to veg for a pork joint are:

Creamed cabbage and leek
Thyme and honey roasted carrots
Honey roasted parsnips
Slow roasted sweet potato

I also shove 2 onion halves under the meat and cook the roasties in with the meat.

Different combinations of root veg in mash or dauphinoise
Roast root veg including the aforementioned vac packed beetroot, with honey, mustard and thyme - great for work lunches with some blue, feta or goats cheese too. Add in red onions and leeks too.
Celeriac mash
Braised celery in cheese or white sauce.
Mixture of braised leeks and quickly cooked cabbage/ kale/ spinach/ chard/ sprouts with lemon zest and butter.
Tried a wonderful Hugh F-W recipe from last veg only book - mixture of mushrooms roasted in olive oil, thyme, garlic and quite a lot of red wine. The wine mostly evaporates, but leaves a gorgeous sticky glaze and amazing full flavour.
Roast butternut squash and sweet potato chunks.
Roast cubed skin-on potatoes with garlic, herbs and olive oil.
