Lunch ideas please for a fussy toddler

DD is going through a fussy stage and may be just refusing everything I offer. Thought tomorrow I could at least try something new/different.
Our normal lunches consist of one of the following
Sandwiches, tomato and veg pasta, mac n cheese, beans on toast, hummus with breadsticks. She has been refusing to eat egg for a while though I do occasionally try.

Any different ideas? Thanks

Pitta bread in strips, cheese cubes, peanut butter on rice cakes, , falafel, crudités, cherry tomatoes, etc, bits of ham/chicken/sausage or veggie equivalent . My DD still likes a simple lunch of a peanut butter or soft cheese sandwich with some veg on the side! I think a pick n mix lunch is always an easy choice that many kids are happy to eat.
If you want something hot, how about make your own pizza, use a pitta or a wrap, or you can easily make a fresh dough (especially if you use a mix) or soup and bread, homemade fish fingers (fun to make with a child too) omelette - maybe a Spanish omelette if they're not sure about eggs as this has a different texture/flavour. Nice cold too.

I recently got the Mumsnet recipe book and yesterday I made this savoury cake thing.
Flour, eggs, cheese, grated courgette, oil (think that was it) and baked it... my toddler who only seems to eat pasta and sausage at the moment wolfed it down!! kinda like a baked frittata

How about toasties?
Tuna pasta
Bagel with cream cheese
Eggy bread
Cheese and crackers
Half jacket potato with cheese/tuna/beans/coleslaw)
Obviously add veg of choice (crudités, cherry toms etc)
