I have to make a birthday cake for a friend's son.

It has to be chocolate cake.

I'd do a basic victoria sponge but they can sometimes be a bit dry - so, can anyone recommend a recipe?

No icing needed, just cake.

Thank you!

Do the basic victoria sponge and add 6-8 tbs of milk! Also, melt a large bar of chocolate and pour that into the mix.

Oh, that's easy. Great idea, thanks Mars

don't forget to add baking powder (3 tsp) makes it nice and light!

You're welcome

Extra baking powder. Done!

I assume you are talking about a basic 6oz flour, sugar & butter & 3 eggs type recipe (or multiples of)

Yup!!!!!!!!!

You could always give it a (pardon the pun) dry run. But I find that mine is yummy. Oh and cook it slightly less than you would a victoria sponge. Makes it just a bit more gooey and yummy and.....................

Nigella Lawson has a whole chapter devoted to fabulous choc cakes in her 'Feast' book. Made one today for my DSis birthday and it was very yummy and very light.... made with horlicks and maltesers!

Ooo, sounds delish, Mars. Was going to wait until Saturday to make it but I might have to do a little practice one, just to make sure it works

Am just wondering, when you bake it, do you stick a knife in it to check it is done? Will it still come out clean or will it be a bit gooey? Don't want to over cook it!

The knife should come out just a teeny tiny bit gooey!

But as I said... practice is the key!

Ooo horlicks and malteasers sounds good too but I'm in the US and can't get either of those. Will go and fish out Feast now so I can have a look at the recipe.

All this talk of cakes is making me hungry.

And, it's 30 degrees, quite humid and my air conditioning isn't working so I don't think baking is a great idea today . Still, there's always tomorrow...

I just make a basic VSC recipe and substitute 2 oz of the flour with cocoa powder, for the filling I use a pot of nutella :yumyum: very chocolatey

mamama · 17/06/2007 20:52

Mmmmmm, Mrs Fish. And I have a brand new, unopened pot of Nutella lurking in my cupboard!
