Green peppers

I have a backlog of green peppers from buying the packs of 3 different coloured ones. Any ideas what I can do with them?

Stuff them with savoury mince/veggie mince and veggies, top with grated cheese and bake in oven.

Seriously though, stuffed peppers are nice, try and find a filling that masks the (to me) bitter taste.

Or deseed, chop and freeze, so you can mix in hide small amounts in chilli or bolognaise.

I try to buy the multipacks of red and yellow peppers where I can. They seem to be more available now.

They're nice in a stir fry with beef strips and a really simple soy sauce, honey and black pepper sauce. Like poster above me, I also shove then in saucy dishes like stews, bolognaise and chilli.

Like the idea of freezing them too.

I used to get the bags of peppers with just red and yellow, but it’s never an option for the online shop Angry

Peppers are over rated and over used.
Chop them up and freeze, chuck the odd half a handful into soups and stews etc.
I hate waste.

Blitz with spring onion and mushroom and use to stuff chicken or fish.

Agree stuffed are good.

Also try microwaving instead of oven baking the stuffed peppers - for some reason it seems to make them sweeter.

Use chunks as 'spacers' between meat on kebab skewers.

Make chutney with dried apricots added.

Stick them on their side, whole, in the oven next to a roast or something. They collapse into soft melt in the mouth deliciousness. The skin blisters, you pull the stalk and seeds away from the flesh, it's gorgeous.

This might be daft, but would they ripen to red if you left it somewhere warm? Like tomatoes do?

Green ones go very well in a Chinese story fry with black bean sauce. It’s the only thing I use them for, if we have a glut of them due to mixed packs I always make this!

I don’t agree about stuffing them, the red ones are better stuffed.

Also don’t agree about peppers being over rated, they are wonderful raw, roasted, stir fried, in pasta dishes, sauces etc.

Roughly chop and add to rough chopped red onion with drizzle of oil in a baking tray. Throw some sausages on top and roast for 20 minutes. Add a tin of chopped tomatoes, spoon of sugar and herbs of choice. Return to oven for 25 minutes. Good with pasta, potatoes or naice bread

Kadai paneer or Potato Capsicum - both Indian dishes - wouldn't be the same without green peppers. Plenty of recipes online!
Also agree with posters who suggested chop, freeze and chuck in a handful whenever cooking soups/ stews/ pasta sauce.

chop up and roast with whole garlic cloves, sliced red onions, cherry tomatoes, and cubes of feta, then stir into pasta & pesto.

Lightly fry with onion and carrot. Make a sweet and our sauce (or buy one) serve with noodles or rice. Yum

Yes forgot about paneer, Indian potato curry, fajitas. All use green pepper.
