Delia’s Mincemeat

I’m looking to make Delia’s mincemeat and wondered what mixing bowl people use? Given the end mix should fill 6 350ml jars it’s got to hold more than 2 litres, and it’s got to be safe in the oven. Mine are either plastic or too small so what should I be buying?

I use a large traditional type mixing bowl - ceramic I think, or a metal one. The temp is so low they are both fine in the oven.

I mixed mine in a big lasagne dish. You have to be careful not to spill the sugar over the side, but it works all round. It’s the best mincemeat by far.

I make the recipe every year and I don't have an oven dish large enough. I just mix it all in a large stock pot and melt it all together on the lowest setting on my hob instead.

Mixed mine up today and tomorrow it will be cooked and jarred up. I was intending to use Ameretto instead of brandy - will this cause problems with the lower alcohol content meaning it goes off?

I may be overthinking this!

I've only made it with brandy - you will not be disappointed, I have made this for years. I make it alternate years and keep the second jar in the larder for the following year.

I would like to know if you use the wax disks and if so why are they important? Do you put it in the jar when it's still warm or cold? And why?
