Do we have any hope of eating less meat?

I’d like to have a couple of dinners a week that don’t have meat but have two big restrictions:

DH won’t eat pulses
Middle child won’t eat sauces except cream.

Oh and I forgot, eldest won’t eat fish.

It’s impossible!

Veggie burgers? We have halloumi and mushroom, usually in a brioche bun with some sweet potato fries.

Quorn is good for bolognaise.

You could do a mushroom carbonara with a creamy sauce.

Chilli works well with a mix of vegetables, same for curries.

Paneer is great in curries.

Curry and chilli is out because it’s sauce. I currently sometimes give him something different though, so might have to continue that.

Halloumi burgers is a good idea in particular.

Use chopped(in processor) mushrooms as "meat" in shepherd's pie etc.add cheese to topping for extra protein

Pizza (or does that count as sauce?), jacket potatoes with cheese and beans for those who will eat them. quorn nuggets are just like chicken nuggets so they may not even notice. Omelettes? Pasta with cream sauce (and peas or chopped fresh tomatoes), vegetarian sausages.

How not saucy does a flavouring have to be? What about a creamy curry? I think you'll have to carry on giving the middle child something different, at least partially, otherwise your diets will be ludicrously restricted, even with meat.

Would aubergine parmigiana be too saucy?
What about feta and spinach pie or frittata?
My older son didn't like fish or pulses, but I got pretty fed up with the restrictions so I just made sure there was something he liked on the plate. If the main course was, say, salmon, I might give him some ham or a Quorn escalope, but nothing that required any additional effort from me.

We have chickens so use lots of eggs. Favourite here is feta and pesto quiche. Super easy, very tasty and no meat or sauce.

Veggie fajitas - I do onion, peppers, courgette and broccoli. Serve with everything separate so your fussy eaters can build their own. Re-fried beans, guac, salsa, cheese, sour cream and lettuce.

Big garlic and herb (and cheese?) breadcrumb topped field mushrooms. Serve with rice and some green leafy veg.

Piri piri butternut squash and hallumi skewers - serve with pita bread or couscous and typical accompianants (salad, pickled jalapeño, garlic sauce, chilli sauce)

BBC butternut squash and sage risotto is great.

Spinach and ricotta tortellini. Does the no sauce person tolerate pesto? If so do it with pesto. If not do it with a tomato sauce and the no sauce person can just have grated Parmesan.

We've just had roasted veg and hummous wraps, could serve with chips for a quick evening meal. We also often have sweet potato and chorizo enchiladas, could leave out chorizo altogether or do what we do and just use a tiny bit as a flavouring.

We also like leek, mushroom and roasted tomato risotto.

If you're OK to give something else to your DC who doesn't like saucy things then shakshuka is a firm favourite too.
