vegetable kebabs for the BBQ

Shoudl I par-boil the butternut squash do you think?
Or if I cut it small enough will it be cooked through on teh bbq?

If you parboil butternut squash it will turn to mush on the barbie! Don't think it 'lends itself' to barbequeing really??

maybe wrap in foil so it cooks in its juice IYKWIM

I was given the idea by seeing some bbq veg kebabs in M&S. They were too expensive to buy (I need quite a few) so I thought I'd make my own. I've bought the squash now so I'll just try it and see.

mckenzie, if you're not sure about using the squash in kebabs.... we were at a BBQ last weekend and they sliced into butternut squash quite thinly into circles. Then brushed with oil and BBQd. it was gorgeous. I'd never have even dreamt of doing that. So why not try some in kebabs (otherwise you'll never know if it works) and some like this and see how it goes?

thanks lilolil. I seem to have an abundance of squash so I shall try both ways and see what happens. Thanks for the tip. I'm making a roast butternut squash salad as well, with cherry tomatoes, avocado and rocket (A recipe that i have copied from a friend). It's delicious but I'm now worried that my guests will think I have a squash fettish

Sounds like a nice recipe, what kind of dressing do you use and how do you slice the squash?

I just made up a classic Italian dressing MinW. I peeled the squash, sliced it about 2 cm thick and then cut it into chunks of about 3cm. I roasted it until it was soft but still firm, not squashy. It was a huge success - none left at all unfortunately as I thought I might have had the left overs for lunch tomorrow but
