need some inspiration for rhubarb

I love Rhubarb, but to be honest, I'm bored with crumble or stewed rhubarb - does anybody have any good rhubarb recipes?

I made this yesterday:

some rhubarb, stewed with some sugar and a little water for 20 mins
whip some whipping cream
whisk an egg-white

fold egg white and cream, add rhubard, put into glasses, chill and eat.

My mum used to make rhubarb jam which was lovely!

squidette - sounds lovely, but I'm pg, so not overly happy with eating raw eggs ... (I know, I know ..)

cornsilk - also sounds lovely, but I don't have any jam pots!

you can leave out the egg whites just have rhubarb creams! You could crunch up a ginger biscuit on the bottom of the glass too for extra 'interest'...

I don't think you can beat rhubarb crumble, but a couple of ideas for a change (tho hvae to be honest, have never tried these with rhubarb, but can't think why they wouldn't work)
You could try poaching it lightly (ie so it's still in chunks), drain it well, and then use it instead of jam in a bakewell tart? I also have a great recipe for raspberry cinnamon torte (ooh, ust found it on the internet, will save me typing) see www.recipezaar.com/63573 and I reckon this would work well with lightly poached, well drained, rhubarb instead of raspberries.tho raspberries are fab. It also works well with mincemeat at Christmas, is dead easy and fool proof. If you have a mixer, just stick all the ingredients in together and it's done in seconds. You don't need the sauce. tho lovely with cream or custard.

This is a good one for disguising rhubarb for your children!

Cut rhubarb into 2cm pieces and stew in 2 tbspoons of water adn a sprinkel of ground ginger, plus about 50g of brown sugar ( or more if you like)
When its nice and soft - let it cool a bit and then wizz it all in the blender with half a carton of ready made custard

totally yummy!
