Easy veggie ideas for 1

Hi i was wondering if you could suggest ideas for me to make its just for me and i dont have a freezer so that limits what i can use. I have a small oven and microwave. Could do with being as easy as possible as i have not much motivation to cook and havent done in ages. I also dont like mushrooms thank you

Pasta is good as you can just cook one portion. And there are so many different options for sauces depending what you fancy. Vegetarian pesto, creme fraiche, tomato sauce...

Jacket potatoes or baked sweet potatoes with toppings - baked beans, cheese, spicy beans, sour cream and spring onion...

Omelette/frittata with whatever vegetables you fancy.

Last week I made a really easy peanut butter based sauce that would go great with mixed veggies or quorn - you mix 1/4 jar peanut butter (Morrison's cheapest) with a veggie stock cube, I finely chopped onion, 1 lime including zest and I red chilli, top up with I cup water and add some garlic (I use frozen, but crushed fresh or paste is fine). This is half what I made so will be enough for two portions - it lasts 3-4 days in fridge. Serve with rice. Highly recommend a rice cooker as makes it so easy, they make a mini one ideal for a single person (they sell them in our local Korean grocery store, tiny place with all manner of interesting foods).

Indian/Thai paste lasts quite a while in the fridge so you can make a batch (or buy) and just cook veggies fresh, paneer or tofu of course are good options.
