Any decent tinned vegetables recipes?

I don't have a freezer, and lack fridge and cupboard space.

I'm also lacking in imagination when it comes to cooking and tend to cook the same things with the same veg. I often let veg go to waste when I can't think of anything new to do with them, so I wondered whether one way of diversifying my veg intake would be to use tinned veg. I'm vegetarian too.

Are all tinned vegetables awful? Are there any decent tinned veg recipes I could try?

Tinned tomatoes are a staple in my house.

Hummus with chickpeas
Lentil curry
Second the sweetcorn fritters and also creamed corn
Lentil and mushroom lasagne
Chips with tinned potato

I use tinned potatoes in frittata. You could probably add tinned mushrooms (taste fine, texture weirdly soft) and sweetcorn, although I don't normally put either of these in (I do peppers and onion)

A yummy lentil soup with some tinned veg.
Tinned pulses really add to a curry.

Vegetables that I think are fab in tins:
Tomatoes (obvs)
Sweetcorn
Artichoke hearts
Palm hearts are delicious for salads
Chickpeas, lentils, all beans
Most fruit in juice

You can get roasted red peppers in oil in jars which are great.

Also in Lidl you can get super nice mushroom antipasti in jars and sometimes other types of antipasti (courgette is good if you see it).

I also like pickled hot peppers and also the big jars of pickled cauliflower that has carrots in as well but I just sort of eat those I don't really cook as such with them.

A lot of the antipasti or pickle stuff in jars come in big packs and don't l keep for ever in the fridge tho so you do need to use them up.

Veg that are OK if used in something:
Green beans
The sliced carrots or baby carrots are ok in a stew or something
Sliced mushrooms are actually ok
Spinach is ok in a curry or other stew
Potatoes are OK in a curry or fritata
Potentially the peti pois in like a shepards pie or something but not on their own

However lots of veg should last quite a long time in the fridge or cupboard?

Some of the ready made stuff in tins is ok too... Ratatouille, Veggie Chilli

Tinned fine green beans are ok, though sometimes over cooked.

Ooh thanks everyone, some great ideas here.

I'd forgotten about the veggie meals in a tin, I used to love the ratatouille in a tin.

Are tinned peas a no go? I love petit pois, but without a freezer I've given up ever having them

Tinned peas are fine - and the ones you get in jars with carrots can be delicious
