Can't help much but want to see what others say.

Chilli works well in the slowcooker.

I do a veggie shepherds pie filling using Quorn mince in there, and then just top with sweet potato mash and flash under the grill.

Rice pudding!

The problem with do a cooking veggie food is that, IME, it tends to turn to mush. I know this isn't what you asked, but I've found the recipes in a book called The Green Roasting Tin ( will post a link later) are very good and quick to make.

I wouldn't use a slow cooker for vegetarian food unless it's pulses- you'll get mush too often.

I do a black bean chilli:

2 x tins of black beans, rinsed.
Onion, chopped
1 tbsp cider vinegar
Smoked paprika
Cumin

Maybe other spices, can't remember but whatever you have and you like will do. Cook on low for 8-10 hours. Eat with rice or in wraps, possibly with feta cheese or sour cream.

Also do a tagine, I'll try to remember how it goes, I've adapted the original recipe, stuff can be swapped in and out depending what you've got:

Sweet potato, chopped
Parsnip, chopped
Red onion, chopped
Carrots, chopped
2 x tins chopped tomatoes
1 x tin chickpeas, rinsed
Handful of dried apricots, chopped

Struggling to remember what spices, I have a feeling cinnamon, cumin and chili, probably a couple of teaspoons.
Eat with couscous probably. The chickpeas weren't in the original recipe but I didn't find it filling enough. Again, some feta cheese wouldn't go amiss at the point of service.

Both of these are pretty healthy, low in calories and can be made in batches in frozen to subsequently take to work. Thus they formed the backbone of me losing two stone on Slimming World a while back.

Watching with interest, another vegetarian here with a barely used slow cooker that I've yet to find anything vegan/vegetarian worth making in it. I've just resigned myself to the fact that it is probably best used for meaty things that benefit from long, slow cooking.
