How do I go about roasting a whole butternut squash?

I just don't want to have to peel it really. It's a big'un and I'd surely cut myself.

Brush it with olive oil and cook it long and slow??

No idea if this would work?

I would cut it in half and take out the seeds. Drizzle each half in oil and whack in the oven for about 40-45 mins

I made stuffed butternut squash on friday, I cut it in half, scraped the seeds out, brush with oil on the cut side then roasted at about Gas Mark 5 for an hour ish.

I usually cut it into wedges, leave the skin on and roast with olive oil.

you don't have to peel it,just vut in half lengthways,scoop out seeds in the middle and bung in the oven.I think it takes about 20-30 mins in hot oven.Then you can scoop out the insides and mash with butter

I can't be doing with the faff of butternut squash so buy sweet potatoes instead and just chop them up and roast them in chunks.

Can I sprinkle anything interesting on it? What would go? Herbs/spices? Can I make it dc-friendly? They find it too sweet. Not cheese tho'.

Sage goes beautifully with bnut squash, add some leaves before you put it in the oven?

don't chop or peel or slice - just shove it in whole at 200C - turn it over after about 30 mins so it does evenly on both sides. When it comes out, cut it in half (should be soft), scoop out the seeds then scoop out the flesh. Voila.

if you are shoving it in with a roast, put it in at the same time but cover it in foil then it can stay in for longer than an hour and you don't have to faff about with timings

depending on the size, at 200C whole, it normally takes around an hour (it's ready when you can poke a knife in it innit)

and I tend to put rosemary or sage on mine. Delicious.
