i need a recipe for 'squidgy' chocolate chip cookies please?

I have developed a bit of a thing for them since I went to a cookie shop on saturday!!! I have decided it will be cheaper to make my own!!

However, all the recipes I have are for ones that are hard when baked (IYKWIM?) I would like a recipe for some that are all nice and squidgy!!! YUMMY YUMMY DROOL DROOL!!!!

can any of you lovely ladies help me please before i spend lots of money on more cookies please???

i made them but they werent squidgy the kids liked them though. would they have syrup or something similar in them to make them squidgy?

DD & I make these.
Cream together 3oz butter & 5oz caster sugar.
Add 1 egg, pinch of salt & 1/2 tsp lemon zest.
Mix in pinch of salt & 6 oz flour.
I do all these stages in the mixer but you could do 2 & 3 by hand.
Add a good handful of chopped up good chocolate (I use about half a bar of the 70% cocoa solids stuff) or those ready made chips if you prefer.
Put balls of the mixture onto a baking tray and press down with back of a fork to make rough circles. Leave plenty of room as they do spread so don't press down too thinly.
I make about 12 biscuits from this so they should be reasonable size to stay a bit soft.
Bake for about 10 mins in a 190 C oven (I do at 180 as have fan oven).
They come out a bit crispy round the edges and chewy in the middle.

I've got a recipe somewhere that seemed to be about 90% chocolate - they were squidgey! I'll dig out the recipe. They're always at their best straight from the oven. Most will harden to some degree when they're cooled. I think I cooked the ones I'm talking about for the lowest given cooking time.

any news on your recipe? sounds perfect for what I'm after.
Also anyone got good idea for cookies that a class of toddlers(3 years) can make. I'm going to do a cookie demo at my dd1 school and I want them each to participate at kneading/rolling/shaping stage.

Dp made these the other day. I think he used a chewy choc recipe from the magazine Delicious . They're just like those Millie's cookie shop ones and the ones in Sainsbury's is that what you want? If so I'll see if I can find it.

I think it was these but it's no good for a class of 3 year olds!

Chunky Chocolate Drops (18 cookies although I'm sure I made more. Maybe I used less mixture per cookie)

175g/6oz plain chocolate, chopped
115g/4oz unsalted butter, chopped
2 eggs
90g/3.5 oz granulated sugar
50g/2oz light brown sugar
40g/1.5oz plain flour
225g/1oz cocoa powder
5ml/1 tsp baking powder
10ml/2 tsp vanilla extract
pinch of salt
115g/4oz pecans, toasted and chopped (I just left these out)
175g/6 oz plain chocolate chips
115g/4oz quality white chocolate chopped up small
115g/4oz quality milk chocolate chopped up small

Now, even I couldn't put that much chocolate into a cookie so I stoppped at chucking an in an appropriate amount of plain chocolate chips rather than using the last 3 measurements!!

  1. Preheat oven to 160 c / 325 f / Gas 3. Grease 2 large baking sheets.
  2. In a medium saucepan, melt the plain chocolate and butter over a low heat, stirring until smooth. Remove from heat and set aside to cool slightly.
  3. In a large mixing bowl use an electric mixer to beat the eggs and sugars for 2-3 minutes until pale and creamy. Gradually pour in the chocolate mixture, beating until well blended. Beat in the flour, cocoa, baking powder, vanilla and salt until just blended. Stir in the chocolate chips and nuts (if using).
  4. Drop heaped tablespoons of the mixture onto the baking sheets, 10cm/4in apart. Flatten each to 7.5cm/3inch rounds (I didn't do this. I flattened them only slightly and put them closer together to make a slightly smaller but fatter cookie).
  5. Bake for 8 - 10 minutes until the tops are shiny and cracked and the edges look crisp. Do not over bake or the cookies will become fragile.
  6. Leave the cookies on the sheets for 2 minutes before removing to a wire rack to cool completely or scoffing the lot whilst warm.

I'm going to have to make these blasted things today! I can virtually smell them cooking!

Oui Oui, shortbread is a good one for children as it needs kneading and you can roll it out to shape it and cut shapes out. It also uses very few ingredients. You can jazz it up by chucking in choc chips if you like
