chocolate fudge cake for wedding

hi ,am making my friends wedding cake [3 tier]
one fruit which is fine as i do that all the time ,one vanilla sponge and one choccy ,
can anyone tell me if you can ice the chocolate as easily as fruit [being softer] and does anyone have fav recipes for choccy fudge ,,and the vannila sponge thank you

Freeze the choc/vanilla one before you ice it then it will be firm for icing, easy peasy

\I don't think you can do these as tiers (one on top of each other with columns holding up each tier) as they are too soft. Do you intend to hire a cake tray with three levels for them or will you place one cake on top of the other (rather like a fountain)?

we used the swan stand we had fruit, vanilla & chocolate cakes too. Will hunt down our pic.

The Swan stand is the type I would suggest too.

hi thanks all sorry for delay in reply,yes i will be using a swan stand ,and have decided on the design ,will be gothic windows with ivy and roses ,but need to bake today and still dont have a recipe for the choc fudge ! eek

Freeze until frozen (!) and then get it out of the freezer and ice the cake immediately so make the icing ready to go on the second you get it out. I would do this the day before you need it as you need time for the moisture to come through the icing (you won't get pools of water or anything!) and settle down.

It does work! I've only done it for none professional cakes though like dc's and a friend's birthday, a bit scary for a wedding cake though, I'd hate to be responsible if it went wrong!
