My son is coming out of his nursery for a few weeks and i will be cooking for him. I have never really had to cook much for him adn he will eat toast and cereal till it comes out of his ears.

It needs to be cheap, really easy and quick.

Have thought about
monday - roast stuff from previous day.
Tuesday - Toad in the hole
Wednesday - maybe a rice dish
Thursday maybe pasta and something.

But have you any other ideas.

He doesnt like fruit and cant eat raw or lightly cooked eggs (so omlettes are out) and nuts.

Monday "warm up" made from the previous days roast (all warmed through with gravy in the pan) was my favourite tea as a kid!! If he enjoys it, why not make that a Monday regular? Mince based: spag bol; shepherds pie; meatballs; mild chilli; lasagne (which is a bit more faffy but if you make the bolognese sauce in bulk and freeze, it makes the final job easier).
Sausage based: sausage and mash; toad in the hole; sausage risotto; sausage balls in tomato sauce with pasta
Tuna pasta bake
Baked potatoes with whatever you have in to top them
Fish pie

I also think you shouldn't worry about having some good convenience foods in the freezer - we don't have many ready meals but usually have pizza and breaded fish in the freezer for days I haven't time to cook.

Staples that are quick and easy

pasta and pesto (we like Sacla) with grated cheese and brocolli/carrots
pasta and cheese
pasta and tuna mayonnaise
cheese on toast
sandwiches
baked potato and baked beans / tuna mayo
beans on toast
chilli con carne and rice (make a big one it freezes easily)
chinese fried rice / noodles (with prawns or chicken)
spag bol

oops, forgot my chilren's favourite: chicken drumsticks dipped in melted butter and topped with herby cheesy breadcrumbs.

Also, they like chicken broth - using leftover chicken, veg, broth mix, and dumplings.

Given that he likes toast,what about so hawaii toast is lovely ( top toast with a slice of ham, a pineapple ring, top with grated cheese and grill) - you might get some fruit down him that way? Or leave off the pineapple and serve with vegetable soup.
Tuna melts also yummy: tuna & mayonnaise on toast, again topped with cheese and grilled. If you serve these toast based meals with veg soup or baked beans, you've got a fairly well balanced meal for a little one.

Thanks for all the suggestion and please keep them coming.

The food needs to be cheap as i have a food budget of about £12 per week or so.

Pesto he wont eat as i told him it has nuts in it and now wont eat it even without.

He is 4 but was very underweight and fussy because of previous allergies which he is alot better about now.

he loves new potatoes, brocolli, sweetcorn and peas, yoghurt, cereal, milk and cakes.

Frozen fish cooked with veg; carrots, peas, maybe baby sweetcorn if you like it, in a tin of coconut milk, served with rice is a great fast staple in our house. Coley is really cheap fish. Takes 10 mins.
