What to do with fresh figs

I have loads of ripe figs from my tree this year. Ideally I'd prefer to peel and freeze them. I don't fancy the skin and there have been a lot of wasps so I want to see inside them.

I don’t know about freezing them but I make an epic flat bread topped with caramelised onion chutney, fresh figs ans Gorgonzola, pop in oven and then drizzle with balsamic and scatter on some rocket.

Eat them in a glorious gluttony? Cut them open and enjoy.

Or, you could try preserving them. I’ve made this, is nice www.sowandso.com/preserving-figs-at-the-villas/ I would do baking and preserving over freezing

They are so good on a barbecue! Or in winter I bake them in the oven and serve with ice cream and honey. Nice chopped up fresh in a salad with Parma ham.

I made fig jam yesterday with ours .... I use 3lbs of figs and upped the sugar in this recipe by 100g. It made 4 jars .. it says it must be eaten within 2 months but if DH this morning was anything to go by they wont last that long!

Sadly Im on a LC diet so I wont be eating any of it ..

I've only ever eaten dried figs before. Just ate some and they are way too sweet for my taste.
I might mix them with rhubarb?

Cut a cross in the top, stuff with goats cheese, wrap in Parma ham and put in oven. Amazing with salad as a starter.

Make a salad: roast figs, roast sweet potatoes, roasted red peppers, cashew nuts, feta cheese and rocket, with a home made dressing. Delicious.

Its gone mad this year more , its about 6ft.tall /wide about 8 years old now .and we've tried to train it as a (v rough) espalier on our SW facing patio wall which gets pretty warm.. (we are on IOW )..

We have never had this many figs from it previously..I reckon there still another 3 or 4 lbs of fruit coming ( next year it will probably be none.)
Our other fruit trees (apples / pears/ plums ) have done really poorly this year . It must be a year for figs! . I am going to to preserve some whole in tea /n honey next . Its a River cottage recipe

My fig tree was planted about 10 years ago. I did as recommended and sunk it in a bucket. It's still gone mad. I pruned down to nothing a couple of years ago, meant to dig it out but forgot. This year it's shot up to about 10' and is covered with fruit. I've been ill and not been in the garden much so I didn't realise until this weekend that I had a huge crop.
It's also done better than all the soft fruit this year.
HollowTalk I like the idea of roast figs.

Roast with a salty creamy cheese - something blue, or goats cheese, drizzle with honey and eat with crusty bread or a salad!

When I had a fig tree I'd preserve some in brandy with a cinnamon stick, star anise and a bit of brown sugar and leave until Christmas. You can then serve the figs with pudding or a terrine and drink the remaining liqueur.
