Apple recipes anyone?

We have a glut of apples from our trees this year, and even after giving some to friends and neighbours, and freezing apple sauce to use during the winter, we will still have a surplus. We have both cooking and eating apples. Any recipe ideas will be most welcome.

I have a great recipe for Dorset apple cake - from my SIL. Will post it later (baby on knee and internet grocery delivery just arrived!)

Spicy apple chutney? The great thing is you don't even have to peel the apples.

Ok, here is the recipe for Dorset apple cake (it's really easy!):

8oz SR flour
4oz butter
4oz castor sugar
8oz cooking apples, peeled, cored and diced
grated rind of one lemon
1 medium egg, beaten
2oz sultanas (optional)

Set oven to 375F or Mark 5. Put the flour into a large bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar, apples, lemon rind and egg and mix well. Add the sultanas if desired. Put the mixture into a well greased 8 inch diameter cake tin and bake for 30 - 40 mins until golden in colour. Serve warm as a pudding or cold, spread with butter. (Not that it really needs the extra calories - but thats what the book says!)

I still puree apple and add it to ds twins breakfast, be it weetabix or hot oats. They love it mixed in (I defrost a couple of cubes each the night before.)

Just another way of sneaking in those 5 a day!

Baked apples are so easy and delicious.

But like Paula what I find best in the longrun is to stew/puree/freeze as many as we can possibly bear to do. Then we have apple crumbles and pies all year round. The boys love apple puree on its own, or with custard, or with yoghurt, or with a meringue topping ... It's one of their favourite desserts. (Good job too!)

You could also get a juicer and make apple juice - which again can be frozen.

Great site Colinsmommy. There are Lots of recipes I would love to try, but how do you make the basic apple sauce? I have never had to make it before. Do you just cook the apple down with some water and do you need to add sugar. Thanks

I just put some water in a pan, maybe cover the bottom an inch to an inch and a half, slice up the apples (was lucky enough to borrow an apple peeler/corer since I had over 50 lbs) and boil for about 10-20 min, depending on how many apples, stirring every once and awhile. Just added sugar to taste. I'd never made it before, just watched what my husband's aunt did, and it turned out fine.

Hewlettsdaughter - I have been looking for that recipe for ages, my MIL makes it but doesn't use measurements, so can't pass on the recipe.

I like the apple chutney idea too, I must start saving jars.

Unfortunately, I am the only one who likes blackberries in the family, so it's not worth making jam just for me. I know you can make apple jelly, but it seems too hard for me, is it possible to make apple jam, or is that a silly question?

Colinsmommy, that website is great I like the look of the cupcakes, though I wish they didn't say how many calories each contain.

So as soon as the family have finished off the Apple Crumble from last night, I will be making Apple Cake, followed by Apple Cupcakes, with good intentions for making Chutney next week
