Prior to DS, when we both worked full time, my DH did the majority of the cooking in our house as he is much better and more interested in it than me. Since DS was born I now work part time and I feel on the days I don't work at least, I should get the meal. Thing is I can never think of what to cook that is quick, easy and low fat. I have two meals - Salmon steak, spinach and jacket potato and Stir Fry (which DH hates!).

So all you good cooks out there please share your recipe ideas with me!

My favourite (and low on Weight Watchers points).

This is for 2, but just increase for as many people as you want.

1 pack of 8 pre-made falafels - oven bake until slightly crispy (about 12 mins).

Serve either on salad, or with salad in pitta bread pockets with a generous covering of dressing made from 1/4 tub of humous mixed with 1 small tub of natural yogurt and some fresh chopped mint.

Grab a bag of Salad leaves "Jardin Leaves from Tescos are tastey", wash them and place them on a plate (a small amount per person), add something tastey like a handful of prawns/ a steak (under grill approx. 5 mins per side with freshly ground salt and pepper and garlic), a piece of grilled salmon (under grill with butter brushed on top and cook each side for about 5 minutes) or any other meat/fish thing....throw olive oil over this, go to your deli counter of local supermarket and ask for a parmesan cheese (it will never go off) about 1/2 a lb....then put a shaving over the meat/fish and then put little tomatoes/ normal tomatoes on the side....or fab meal is an avocado sliced in half with a squeeze of lemon juice with freshly ground pepper, served with dry crispy bacon, grated cheese and salad leaves and new potatoes/couscous/ciabatta rolls....or get 4 chicken breasts in a bowl, 2 cloves of garlic, couple of sprigs of rosemary, juice of one of lemon and 4 tbsp of olive oil(alter measurements as per number of people)....soak for a couple of hours.....then fry olive oil in pan for a few minutes, add chicken until browned...add rest of olive oil mixture and then add a glass of white wine and cook until clear juices....tastes lovely with courgettes, salad leaves, rice, new potatoes or couscous, can add cream to final recipe if you fancy something with a bit of thickness to it....., or par boil some leeks/cabbage....fry some garlic and onions and then add the cabbage, add bacon(dry fried for 5 mins) and 1/2 pint of vegetable stock...cook for 5 mins...put in a casserole dish with tomatoes, grated cheese and top with bread crumbs and nutmeg...cook in oven at 180oC for about 20 minutes and serve with new potatoes/cous cous/ tortilla wraps/ rice....or fry chicken for a few minutes until browned add jar of Chicken tikka paste, cook until tender, then serve with chapatis, yoghurt, mint sauce (to mix with yoghurt)....

Chicken breast with stuffing on the top. Oven for 20 minutes on 200.

Serves with veggies, salad, potatos, rice, pasta whatever.

Or in a real hurry. Tescos origional pasta sauce on a big pan of pasta. Bung in some prawns, ham, cheese, sweetcorn, peas etc etc. Easy meal in 10 minutes!

I've just put 2 trout (trouts? doesn't look right!) in the oven. I shoved a sprig of rosemary, salt, pepper and some slices of lemon in each and sloshed white wine over the top and wrapped it up. With it we are having a basil, tomato and mozzarella salad and a green salad with small bits of crispy bacon in it (oil patted off with kitchen roll).

Oh this is a thread I NEED! Feel a chicken stuffed with Philly night coming on (thanks Titania.)

Another quickie:

Get some pasta on the boil.
Heat oil in large frying pan, add about 4 slices of smoked bacon, diced.
Cook for a while, then add sliced courgette.
Chuck in some halved cherry toms as well.
Cook through, then add a little water from the pan the pasta is cooking in.
Throw in a jar of any kind of pesto, heat through.
Throw on top of the cooked pasta!

DH was at the England game last night so I just threw together things I could find for my supper,
boiled some wholewheat spaghetti,
fried fresh peas, 1/2 onion and garlic in pumkin seed oil,
added chopped cooked turkey to cook through then mixed with spaghetti and I drizzled over some chilli and garlic sauce. It was embarrasingly easy and v tasty.

4 minute fish...

4 salmon fillets, jars of sundried tomatoes, roasted mushrooms, etc (any antipasto stuff in a jar is fine! you'll find them near the olives!) Put fish in a microwavable dish, spoon over chosen mixed antipasto bits, cover and microwave for 4 minutes. Serve with rice, potatoes, pasta, whatever! I ususaly stir fry some additional veggies and then stir in some Roule cheese for a creamy finish.
