Butternut Squash ideas please???

I got one of these on Wednesday & have no idea what to do with it... has anyone any nice ideas?

Peel it, chop it, splash of olive oil and roast it.

Peel it, make into chips, spray with oil, cook in oven.

Add it to stews and soups

After looking for stuff on here, I roasted it in foil, scooped the flesh, added turmeric, black pepper, cayenne and a bit of salt, plus a chopped onion and enough boiled water to my thingy, you know the one that stands up, errrrr, you make smoothies in it, arrrrrrrrrrrrrrrr blender, sorry had a preg head moment and needed to go with it.

DH said it was the best soup he has ever had.

Oooh the soup sounds delicious!! Might give it a go!

Like the thought of making chips out of it too, as we make chips in the oven as well, so could just bung them in tomorrow if we're doing chips!! Would I have to parboil it if making chips?

roast in oven in skin for about 45 min

cool lsighty, peel skin off , scoop out flesh,. discard seeds, plac ein fryign pan with onion and smoked bacon... fry till yummy, season with blakc pepper

Risotto.

Boil in stock for a couple of mins, until soft. Remove from stock. Use stock to cook rice, adding a bit at a time, in the rissoto way. Add butternut sqash when rice is done. Stir in a spoon of cream and seasoning.

Good in daal - gently fry onions & garlic (you can add chopped peppers too), add curry paste (about 1/2 jar Pataks tikka masala or whatever you like), cook for a couple of minutes then add a cupful of red lentils, the butternut squash (peeled, de-seeded & chopped) & a litre of veg stock. Simmer for 20 minutes or so, topping up with water/stock as needed.

You can also make this with yellow split peas, takes longer though. Add 1/2 block creamed coconut if you like it sweet/mild.

The squash goes quite, well, squashy, but adds texture & flavour to the daal. Also freezes well so useful midweek standby.

If you make a soup with it, then add that ravioli you get in the fresh pasta section, it is delicious!

Risotto. With bacon. Or I've just made one from the Annabel Karmel 100 Baby Purees book for dd, which I scoffed the rest of instead of freezing, it was that nice.

I normally make cake or cheesecake - you can roast it, sieve it, and then it's basically pumpkin puree.

Omg I have so much to choose from now!

It's early, it's Saturday, my house is clean, dh has the kids outside teaching dd how to ride her bike....

I might get one or two of these recipes made now when I have peace!!

I am going to look & see if I have tumeric as I have the rest & maybe make that soup.

Creambunnie... where would I get the recipe at for your soup?

If they are nice I'm going to buy one next shopping day & try the rest of the recipes!!

Have just made UCM's soup... Dh is tucking in as we speak Dd says it's far too spicy so has declined!

Raost squash and carrot soup:
Roast whole squash in foil in the oven, while that it doing, chop a large onion and about 4 large carrots and soften them in a little oil. Then add 2 veg stock cubes, about 3 tsp ground coriander and 1 litre of water and simmer till carrots are soft. Scoop out the squash flesh when it is cool enough to do so, add to the pan and blend till smooth. Serve topped with fresh coriander and crusty bread.

Have also done a spicy version with 2 parsnips and madras curry powder instead of carrots/coriander.

Or to make it even more chunky you can add a barley/pea soup mix as well, delicious though you might well be turbo charged for a couple of days after. Don't say you weren't warned!

Squash, cocnut and chilli soup:

Fry an onion until soft but not brown.

Chop squash.

Cook squash, onion and one chopped red chilli in can of coconut milk until soft.

Liquidise.

Yum.

Butternut squash, orange & ginger soup

4 tablespoons olive oil
1 large onion, finely sliced
1 clove garlic, crushed
1 medium butternut squash, peeled & chopped
1/4 teaspoon ground ginger
565ml (1pint) veg stock
100ml (3.5 fl oz) orange juice
6 tablespoons single cream
salt + freshly ground black pepper

Heat the oil in a pan, add onion + garlic, cook til soft (without colouring)
Add buttnernut squash + ginger and cook gently for further 5 mins
Add stock + orange juice, bring to boil, cover + simmer for 25-30 mins til squash tender
Blend until smooth
Return to pan, add cream, season to taste. Reheat gently for 5 mins + serve.

Buy some power tools you'll need them to peel and chop it, if the one i did a while back is typical of this vegetable.
