I've used a new chilli powder (supposedly mild) and it's really hot (probably as with the old stuff I used about 1tbsp chili powder to 1tbsp chili con carne!)

Can I neutralise it without just doubling quantity?

Oil reduces the heat, in my experience.

Or yeah, sour cream or yogurt at the table.

couple of pieces of dark pure chocolate. Mexican style .

yoghurt

tomato puree?

Agree with alipiggie on the dark chocolate. Takes the fire right out of it and leaves the chilli with a lovely glossy look to it. Not too much though, and NOT dairy milk!!! HTH
