Anyone got a nice recipe for a COLD chicken dish??

For my sins, I'm organising a school supper do next week. In order to keep the cost down, I've ordered lots of salads but am going to do the "main" dish myself. I was thinking chicken, that way I can easily dice some chicken breasts and poach them or whatever. I need to present them in some sort of sauce to go with the salads, though. MIL has a lovely recipe for something she calls "Coronation Chicken" involving mayonaise, curry powder, dried apricots and who knows what else. Unfortunately, she had a stroke earlier this week and is in hospital and as she can't remember her DH's name, I doubt she's going to be able to remember the recipe anytime soon, unfortunately (selfish ). I've googled Coronation Chicken but all the recipes I've found seem to be for hot dishes, which aren't going to be suitable. Anyone got any good ideas??

Can defo recommend coronation chicken, have made it for several large buffets myself and it goes down well. My recipe v. similar to MellowMa's, but I don't add apricots. How's your MIL doing GameGirly?

Thanks for asking, Lilolil. She's doing ok, slowly but surely. Unfortunately she lives in France so I haven't seen her but DH went over there to give moral support to his dad. She's apparently a little better than she was, is able to string 4-5 words together and currently has right-side paralysis. Unfortunately I know very little about strokes but I understand that with physio and speech therapy she should eventually make a good recovery. The main probelm is FIL who, although a lovely man, is absolutely hopeless around the house. DH moaned to me this morning that he had to clean the house. Unfortunately, he didn't get much sympathy from me! Anyway, hopefully she can be repatriated in a couple of weeks and whilst they live a good 4 hour drive from us, it should nonetheless be easier to help. And they have more friends and family over here who I hope will pull together.

Mellowma's recipe looks fab, doesn't it? Might keep the apricots in for "added interest".

It's difficult when you're so far away. I hope she does make a good recovery. And on a lighter note, hope your DH puts his housekeeping skills to good use when he gets home!

Precisely what I said, Lil! (If he ever comes home ... he seems to think his parents need him more than I do at the moment, which they probably do ).
