I found a bargain but dont know what to do with it? - Cultured Buttermilk?

It was a bit of a bargain providing i can find something to do with it.

Can anyone give me an idea. Did think smoothie but dont have much fruit so it will have to be in something.

you use buttermilk to make soda bread, from what I can remember it help it rise because you dont use any yeast in soda bread, will see if I can find recipe.

Or look on the BBC website - go to lifestyle then food and click on find recipes and in the search box type buttermilk - it woll come up with lots of recipes using buttermilk.

Nigella's Coke cake

Coca-cola Cake

Cake
200g plain flour
250g caster sugar
½ teaspoon bicarb
¼ teaspoon salt
1 large egg
125 ml buttermilk (or 30g yoghurt + 100ml milk)
1 tsp vanilla extract
125g unsalted butter
2 tbs cocoa powder
175ml coca-cola

Icing
225g icing sugar
2 tbs (30g) butter
3 tbs (45ml) coca-cola
1 tbs cocoa powder
½ tsp vanilla extract

22 cm spring form lined with greased foil

? Preheat oven to 180/ 350/ Gas 4
? Combine flour, sugar, bicarb & salt in large bowl
? Beat egg, buttermilk & vanilla in a jug
? Melt butter, cocoa & coca-cola in a heavy-based saucepan, heating gently
? Pour into the dry ingredients. Stir well.
? Add liquid ingredients from the jug, beating well until blended
? Pour into prepared tin
? Bake for 40 mins until tester comes out clean

? Leave to stand for 15 mins
? Put cooling rack on top of a sheet of newspaper
? Turn cake onto cooling rack

? Sieve icing sugar
? In heavy-based saucepan, melt butter, coca-cola & cocoa, stirring
? Add vanilla. Remove from heat.
? Spoon in icing sugar, beating well until mixed but still runny
? Pour icing over cake, while cake is still warm.
? Leave to cool before transferring to serving plate

Can also use the mix to make muffins or a loaf. I sometimes add chocolate chips and don?t ice the cake.

Soda bread is lovely. This is James Martin's recipe.

Ingredients
170g/6oz self-raising wholemeal flour
170g/6oz plain flour
½ tsp salt
½ tsp bicarbonate of soda
290ml/½ pint buttermilk

Method
1.Preheat the oven to 400F/200C/Gas 6.
2. Tip the flours, salt and bicarbonate of soda into a large mixing bowl and stir.
3. Make a well in the centre and pour in the buttermilk, mixing quickly with a large fork to form a soft dough. (Depending upon the absorbency of the flour, you may need to add a little milk if the dough seems too stiff but it should not be too wet or sticky.)
4.Turn onto a lightly floured surface and knead briefly.
5. Form into a round and flatten the dough slightly before placing on a lightly floured baking sheet.
6. Cut a cross on the top and bake for about 30 minutes or until the loaf sounds hollow when tapped. Cool on a wire rack.

I have been looking for powdered buttermilk in the UK.. I used it for a buttermilk biscuit recipe in the States, but was told I couldn't ship milk products here... ASDA and Tesco think I'm asking for something really gross when I ask for Buttermilk - either powdered or fresh.. Can anyone help with a UK source.. Preferable Lancashire..

I am going to try and make this at some point this week in my drive to introduce new meals in our house and have the buttermilk waiting!

i found the buttermilk in sainsburys, it was 10p i have seen it in tescos as well. It is kept with the normal milks/soya and flavoured milks and creams.

Otherwise, if you have a local little Irish shops, they always sell it.
