Definitely just go on a spree and pick things you like the look of - we do it every so often and have a Chinese snack night with friends, the fresh udon noodles in the fridge cabinets as you go in are lovely though

I am not in that area but I always get the fresh yellow egg noodles from the cold section of my local Chinese place. The bag they come in feels squidgy and a bit squelchy from the oil they are coated in. Pick up some fresh beansprouts and any of the green leafy veg too, cook it all up together with some garlic and ginger to taste.

I also tend to stock up on proper soy sauce (dark, light and sweet) oyster sauce etc.

I like nissin noodles in black garlic (black packet) or the original sesame flavour (red packet) from my local Chinese supermarket. Tonkotsu flavour (green) is OK too. They aren't very healthy though....

I also buy big packs of (dry) soba noodles.
If you get some bonito (smoked tuna) stock powder (Japanese section) you can make a cold dipping sauce/soup for cooked cold soba noodles with shredded raw ginger and spring onions, which is very refreshing in this hot weather.
