Choc topping for traybake thingy DD has made for her Brownie Hostess badge tonight

melt butter in saucepan
when just melted, add squares of choc
then when thats melted add icing sugar
stir until glossy
then add a bit of milk to make thick spreadable

  • it was shiny, rather than glossy(!) and ewnt into a big lump that hissed its way aroudn teh pan. When we added the milk and mixed it up and put it on the cake, it wasn't glossy at ALL and actually quite hard to spread.

Where do you think we went wrong?

I think you probably overcooked it and the chocolate seized or whatever it does. You shouldn't melt chocolate over direct heat - either do it over steam (although don't let the steam touch it) or in a microwave.

If you have a microwave, try putting all ingredients in there next time and giving it 30 second blasts, stirring vigorously in between each blast.

I have a version of this where you melt butter and milk (obv milk doesn't need melting) then throw in enough icing sugar and cocoa to make it thick.

It's yummy and spreadable but not glossy.

Maybe not enough milk? Or perhaps too much heat. Would be wary of heating chocolate too much.

MamaG, have you tasted it? I believe seized chocolate can taste quite bitter.
