Need ideas for long lasting bakes

Going to bake my dad some treats for fathers day as I can't afford much.

Got a recipe for a jaffa loaf cake that looks nice and says it will keep for a week. I can only bake these on Wednesday this week unfortunately as no time otherwise.

Any ideas? Could do some biscuits but dunno what. Can't ice unfortunately as no equipment.

Nigella has a recipe for amazing cookies. I often make the dough, freeze it and then defrost and cook when needed. Would that be an option? The dough defrosts within a couple of hours if left on the side, then they take minutes to cook. They're ridiculously tasty.

Gingerbread or parkin type bake?
Fruitcake.
'Fridge cake - although that can be knocked up in about 15 mins, if you have a small amount of time nearer the weekend?

He doesn't like fruit cake.

I do nice cookies but they wouldn't last long enough.

Might do the gingerbread though.

Brownies...keep for ages, but also freeze brilliantly. Loads of different recipes, but this is my favourite:

300g butter
300g dark chocolate (70% cocoa)
250g soft light brown sugar
200g dark brown sugar
5 eggs
200g plain flour
1/2 tsp salt

Grease and line a 30cm x 20cm tin - needs to be quite deep
Melt butter & sugar together over a pan of simmering water
Meanwhile beat eggs & sugars together till well mixed, golden in colour and creamy
Add melted chocolate/butter and mix
Add flour & salt and mix well

At this point you can stir in additional ingredients if you want - nuts/chocolate chips/dried cherries etc. Favourites in this house are white chocolate chips and then I squeeze a tube of Dr Oetker's salted caramel stuff over the top and use a cocktail stick to swirl it around the top of the brownie mix.

Bake at 180 for 25-30 minutes. Brownies are better under-cooked than over-cooked - then you know they're going to be gooey. The last time I froze these, I froze the whole block at once, then cut it up once it was defrosted - they were perfect gooey brownies Smile.
