Roasted veg not oily?

How can I avoid my roasted veg getting too oily? Is it the oven temperature? Length of time to cook? Spacing of veg? Thickness of veg? Oil used? Should I cook them on parchment paper? Or the bare tray? Or what? Thanks

If you're roasting them on the tray with the meat, put them on a rack. Put them back in very hot oven while meat is resting.

Make sure you are putting them into a really hot oven and into hot fat - don’t over crowd the pan or use too much oil and don’t open the oven door for at least the first 20mins

Thanks both! Would you put on parchment paper?

No I wouldn't - you want them to have direct contact with the tin as that will help them get crispy - using parchment paper is likely to make them soggy

Thank you!
