how long will sponge cake keep?

My dad's 60th on monday, and we're going away for the weekend to celebrate. I have been tasked with baking the cake, fine as I normally do this. However I normally bake cakes the day of or at most the evening before and there's generally no left overs! As we're going to be away, I've got to make the cake Friday. Will a sponge with a cream cheese frosting keep from Friday to Sunday?

Can't to make the cake, freeze it and ice it on the day? It will freeze well but I don't think icing will.

Don't think I can keep it frozen while we travel. Can probably put it in the fridge when we get there.

As long as its well wrapped up - cling film if it's not hot - and if it's a lively moist one it will be fine. I find that a chocolate fudge, drizzle cake or something with apples in it ate much better on day 2 (or 3 if they last that long) as they are squishy and delicious. Polenta is good too as it needs to be a little drier anyway.

A Madeira cake will last a week, but a Victoria Sponge will dry out in two days unless frozen.

Cream cheese icing needs to be kept cold surely? I would bake the cakes now, wrap in clingfilm and freeze, remove from freezer as you leave which will buy you an extra day or half day. Leave in clingfilm until ready to ice on Sunday.
