Kosher salt

I have seen quite a few American recipes online which require kosher salt.

What is this and why is it kosher?

I did google kosher salt but just found a description of its characteristics and no explanation of why it is kosher. I even looked up kosher food rules (I am not Jewish) but couldn't see any reason why any other salt would not be kosher.

Really curious. Does anybody know?

It’s not salt that is kosher as all salt is kosher. It’s salt that is used for koshering meat. I think it is flakes rather than grains.
You can use any salt in your recipes.

Thanks TickledOnion I guess the coarser texture makes it more suitable for that purpose does it?

It's not iodised. Most salt in the USA had iodine added. Salt in the UK doesn't, so any salt is suitable.
