Can anyone furnish me with the flapjack recipe from J O's rednose day recipe book?

Fruity Flapjacks - makes 16

4 tablespoons golden syrup
200g brown sugar
250g butter
350g oats
150g mixed dried fruit e.g. cherries, cranberries, apricots or prunes (chopped if necessary)
OPTIONAL: 3 pieces of stem ginger, finely chopped

(I found them greasy using this amount of butter so reduced to 200g, don't know if anyone else has found this happens though, was only me and ds to test them)

Preheat oven to 150C/300F/gas 2, lightly butter a 20 x 30cm, 4 cm deep baking tray.

Syrup, sugar and butter into large saucepan, medium heat until the butter melts, everything will be bubbling and caramel coloured. Take off the heat and stir in oats, fruit and optional ginger. Pour into baking tray and press down with the back of a wooden spoon until smooth and flat.

Bake for 40 - 45 mins. Cool in tin for 15 mins before cutting into portions with a sharp knife. Then leave to cool completely before removing from the tin.

BANANA FLAPJACKS

140 g Butter
100g light Muscovado Sugar
2 heaped tbsp Golden Syrup
350g Porridge Oats
1 level tsp of cinnamon
Half a tsp baking powder
2 medium sizes ripe banana peeled and mashed

Melt together butter, syrup, and sugar in a large pan over a low heat.
Stir in oats, cinnamon, and baking powder. (you can add a pinch of salt here, if desired)
Add mashed Banana and stir well to combine.

Tip into a buttered dish (23cmX33cm)
Smooth out mixture
Bake for 20 minutes or until edges are just beginning to turn golden brown.
It should feel quite firm to the touch

Transfer tin to a wire rack and cut the mixture into bars while still hot. Cool completely before removing.

These keep in an airtight tin for a week or freeze for up to a month.

mine too! that why I had to freeze them just so I could control the consumption
