Can anybody describe what beetroot tastes like?

I really want to have more rainbow type vegetables, but I haven't actually tried beetroot! I vaguely smelt it and I wasn't all like "wow that smells nice" type of reaction but I really want to try and like it lol. I'm thinking of buying pickled beetroot! Can anyone tell me if you'd recommend having it?

Pickled beetroot tastes mainly of vinegar, get some of the vacuum packed cooked plain beetroot.

Dice some of it up and stir into plain greek yoghurt with a dash of lemon juice and some chopped spring onions, a lovely salad side.
Use some thinly sliced in a cheese sandwich, with a splash of vinegar.
Cut into batons, stir into a mix of mayonnaise and horseradish, serve with cold meats.

Beetroot also goes well with feta cheese.

Don't bother with picked beetroot, it tastes mostly of vinegar.
We grow our own, it's lovely a sweet slightly earthy flavour. Eat too much and it turns your wee red!

Tastes like mud. It's only good in a brownie.

Sweet and watery, or if it's pickled, sweet and vinegary.

I used to think it tasted of mud.
However, I learned to peel it (with a potato peeler) and roast it. Delicious. Blended up with some sweated onions and stock, it makes a fantastic soup. Crumble feta in it for added scrumptiousness.

I'm disappointed by all the celeriac hate on this thread. Celeriac is lovely.

I love celeriac and love beetroot, it has a sweetness as an OP said like carrot. (never in vinegar for me though ) Yuck!

I don't eat potatoes so I have celeriac instead Broomstick dh says it's NICER than spuds but he was force fed vinegary beetroot when he was little so I have to hide mine at the back of the fridge!.

Tangy, sweet, earthy and unpleasant. Celeriac and celery are much nicer.

Oh and absoluetly awful in chocolate cakes or Brownies, renders them inedible.

I read somewhere or was it on the telly? We don't eat enough soil nowadays hence all the allergies! There's not enough of the right bacteria in our guts!
