I have 5 large Very Ripe Bananas & 3 Apples-Any Ideas Please?

Forget the apples for now

cut in half 3 x slices of white bread. and put in the bottom of a biggish dish (that can go in the oven) add just over 1/2 pint milk with 1 egg beaten into it. Slice the bananas length ways and put on the top and sprinkle with a little lemon juice. melt 3 1/2 oz of butter and the same of soft brown sugar in a pan and stir until sugar has one all treacley then pour over the bananas, whack in the oven 180 ish for 1/2 hour. Serve with fresh cream, scrummy, yummy yummy....

My mum got this receipe out of a magazine 35 years ago and it still goes down well all these years later.

Best banana recipe EVER, works every time, turns out perfectly and is gorgeous.

Banana Bread Recipe

175g. Self-raising flour

125g. Butter, melted

150g. Sugar (Fairtrade)

2 large eggs

4 small very ripe bananas (about 300g weighed without skin) mashed (Fairtrade)

1 teaspoon real vanilla extract

Preheat the oven to about 150 degrees C for a fan oven (a little more for a conventional oven.)

Add the sugar to the melted butter and mix. Then beat in the eggs then the mashed bananas and vanilla extract.

Add the flour gradually.

This amount will fill approximately 12 large muffins cases and will take about 15-20 minutes to cook.

If you want to make more, smaller muffins decrease the cooking time

If you want to make one large cake increase the cooking time to approximately 40 ?50 minutes depending on the size of the tin.

Don?t worry about the times too much. It is easy to check. Test with a toothpick or skewer. If the cake is done the skewer will come out clean.

You can also tell by pressing the surface carefully, the cake will feel springy when it is cooked.

I don't have any vanilla essence so I've been using almond essence and a handful of currants in mine. Really nice!

Make a smoothie by adding some yoghurt/orange juice & freeze in small tubs! [yummy emoticon!]

Oh and if I had three leftover apples, I'd skin them and stew them til they were soft in the microwave with sultanas, cinnamon and brown sugar, knock up a simple sponge flavoured with mixed spice and a splash of orange juice, pour half the sponge mix in into a buttered and floured cake tin, then a layer of the apple mix, then top with the sponge and bake.

I often do the same thing but bung it in the microwave for a few minutes and then cover the whole thing in custard so you can't see that it looks rather anaemic. Tastes virtually the same and means you can knock up an emergency winter pud in under ten minutes start to finish.

mmm, rum. I remember that.

Also, baked apples are good for a quick healthy pud with natural yoghurt, or naughty with custard/cream.

Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Score the skin around the centre of the apple, to stop the skin bursting as it cooks.
Stuff each apple with a couple of teaspoons of brown sugar and 2 tablespoons of dried fruit. Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven at 175oC/350oF/Gas mark 4 for 15 minutes, until sugar begins to caramelize and apples are tender. Serve with ice cream, custard or enjoy simply as they are.

Again (god, I must sound like I cook everything in the microwave!) we used to make these in the micro, only we called them apple volcanoes as they used to burst. Be very careful to let them cool a long time befoe giving them to the kids as they're hotter than the surface of the sun inside at first.
