what should I do with left over roast chicken that isnt curry or a pasta mix???

Need some inspiration. Have half my chicken left and need to feed,dh,myself,ds[3] and dd1[1] with it so suggestions please.

for yourself and DH a nice big salad with chicken on top would be good - often make this with tomatoes, spring onions, a few mushrooms, and baguette on the side.

Never seen a 1yr or 3yr old eat a salad but perhaps just giving pieces of the chicken with some kind of veg-based dipping sauce would work?

I sometimes do a chow mein. Stir fry veggies and boil noodles. Add chopped chicken to veggies and heat through. Mix up with noodles and soy sauce.

Otherwise boring - have it cold with baked potatoes and salad?

Get some tortilla wraps, and fill with the cold chicken, plus mayo and whatever else you fancy. (We use roasted tomatoes and chickpea salad with cumin, olive oil, lemon juice and red onion.)

Make into a pie - my absolute favourite. I add bacon, mushrooms and onion, cover with a white or cheese sauce and top with puff pastry. Mmmmmm.

chicken risotto

chicken and almond salad (mix a dressing half mayonnaise/half cream, some chopped chives and lots of raisins that you've plumped up with boiling water first, dress with some grilled almonds)

Probably a daft question, but would there be a way of doing a chicken pie without a white sauce? One of my DDs is allergic to milk.

Ceolas, I use a tin of cream of chicken soup, just enough so that it isnt dry (its the only way dh will eat it)

You can make a white sauce without milk. All you need is flour, fat (can be olive oil) and any liquid. You can make a white sauce with flour, butter and wine for example.

Could you make soup with the carcass and some veg. Serve it with bread. My kids love soup.

We always have cold chicken and chips with peas & sweetcorn for our leftover roasts. Not totally healthy, but delicious!

re chicken pie sauce i cook the onions mushrooms and celery first, remove from pan to pie dish leaving juices in pan. add splash of white wiine or vermouth bring to boil, add stock and a dash of mushroom ketchup, pour into pie dish, stick lid on, shove in oven. voila chicken pie with no white sauce

nemo - do you have butter/veg fat and flour ? Then you can make pastry. Rub fat into flour until it's crumb-like, then add enough cold water to make a pastry consistency. It should ball up without sticking to much to your fingers and without being crumbly. Everything should be as cold as poss.

Fry some mushrooms and onion (or whatever you like) in a pan with some oil. Add the chicken. Take everything out and put in in a pie dish. Sprinkle flour over the empty pan and stir it in. Add some chicken stock (cube will do fine) and keep stirring until it thickens. Add this gravy to the pie pan.

Chicken Pie.

I always roast two chicken. We eat one, and a bit of the second, and then put the other in a chicken pie.

It is so easy to make - make a white sauce using butter, a chicken stock cube, flour and milk. Add some frozen corn and/or peas, and then the chicken pieces. Top with ready made puff pastry.

you could use woucestershire sauce instead of mushroom ketchup or failing that a small teaspoon of marmite

and if you have suet you could make a suet crust which is what I usually do cos normal pastry hates me.
