If so, pesto pasta, pasta with hidden veg, pasta with a tomato sauce etc

Blimey - can't remember at all what 8 month olds eat, but how about:

jacket potatoes - the cheapest meal around - add cheese/baked beans/tuna+ mayo/any combination!

Pasta with lentil sauce - fry 1 onion, some mushrooms/peppers/courgettes/whatever, add tin of tomatoes and some cooked lentils. For children you can then puree the mixture and have with pasta.

Fish and rice - either smoked fish or just plain - wrap in foil in a bit of milk, squeeze lemon over it if you've got one, and bung in the oven for 20-30 minutes - until it's tender. Cook some rice, put the fish on top and pour the juice from the foil over it! Yum!!!

This is going to sound really thick but how do you make omelettes? I had a bad one when I was around 17 and haven't eaten them since but I think it's something as a family we'd like. Do you stick anything with them as well as in them?

We have a fair bit of homemade pizza...

Dh doesn't like pesto, we do have quite a bit of pasta so I best put a pasta meal in there...

Sausage and mash? Slightly more expensive dependiing on what kind of sausages you get - and I'm not sure they're OK for 8 month olds??

Or any kind of casserole-type meal that you can stick everything in a post - sausages cut up, with onions, carrots, peppers, etc. and either buy a cook in sauce or make one with tinned tomatoes etc. And have with mash/jacket potatoes/rice. If you cook the casserole for long enough it'll all be very soft, or you could puree some of it.

ooh - omlettes - gorgeous. for a HUGE family sized omlette I break 5 - 6 eggs, dollop of milk, big handful of grated cheese and mix the whole lot together. Big frying pan with healthy amount of butter in - melt the butter and pour in the mixture. You can then add in mushrooms/ham/whatever you fancy, and cook it on the hob until the bottom gets firm (so to speak). I then stick it under the grill until the top also cooks, going nice and brown. Absolutely delicious and very filling!!

cheesy scrambled eggs is another good one. As many eggs as you want, milk/creme fraiche/lots of cheese - put the whole lot in a pan with some butter and keep mixing..!

Fish pie - get frozen blocks of coley from any supermarket (they are skinless and boneless), poach in milk till done, drain off and keep the milk and use it to make a white sauce. Break the fish into chunks and stir in. You can also add frozen peas, or cooked mushrooms, onions, leeks, courgettes or broccoli. Put in a casserole dish and top with mashed potato (or for another version top with thick slices of buttered white bread). Greate a bit of cheese on top and bake in medium oven for half an hour. Really delicious but also great for babies.

You could make a fish-pie style thing with just the veggies, or veg and chicken pieces.

how about cheese pudding?

cut 4-6 slices of bread (crusts removed) into cubes and place in a casserle dish.

add layers of tomato and onion over the bread.

lightly beat 2 eggs and add seasoning and 250ml milk. pour over the bread.

sprinkle 100g gareted cheeze over the top. bake for 40-50 mins until risen and golden.

okay guys thanks I'm sorted!

mon - jacket potatoes with salad, beans and cheese
tues - toad in the hole with mash potato and onion gravy
weds - omelette with onion, ham and cheese
thurs - tuna meatballs and linguine
fri - chicken and pasta stirfry
sat - fryup/cheese on toast/scrambled eggs on toast

Came in £10 over budget but I just can't sem to get it under now adays

oh also cheese souffle.

melt 25g butter and stir in 15g flour and cook for a few mins. gradually stir in 125ml milk and bring to boil, stirring continuously.

cool slightly and add 75g of a grated cheese, ham, mushrooms, tomataoe, onions mixture.

whisk egg whites of 3 eggs and fold into the mixture.

pour into a greased dish.

bake for 35-45 mins.

Fritatta/Tortilla/Spanish Omlette or whatever you want to call it:

Fry sliced onions & thinly sliced potatoes in oil over a medium heat until onions are lovely and caramelised & potatoes are soft. Add beaten egg & continue to cook slowly until set. Can be finished off under a grill.

I kind of guess as quantities. You want enough egg to cover the other ingredients and it should be thick enough to cut into nice chunky wedges. I think it would be a fairly easy finger food when cold for a baby as it's pretty firm. You can add grated cheese or any other veg you fancy. Peppers are good.

You can take a shortcut and use leftover boiled potatoes if you like.
