Sorry, only read the 1st bit . Just use a little olive oil and a tiny bit of balsamic vinegar if you've got it. Had a bb-q last weekend and bought a boned leg of lamb, cut through to make a rectangle iyswim. Marinated in herbs, garlic and olive oil and done for about 40/60 minutes. It was delicious.

There isn't any lettuce in greek salad - its cucumber you use.

My recipie is

1/2 cucumber cut into medium sized dice.
3 ripe tomatoes seeded and cut into eighths
two good handfuls of pitted black olives
one block of feta cheese cut into small dice
Glug of olive oil
Juice of one lemon.

As for meat - I think with greek salad it has to be something lamb based. Maybe lamb kebabs, made with neck of lamb, red peppers and red onions?

Greeks may not technically use lettuce because it's not as readily available in Greece (I gather) but Greeks who live in places where lettuce is readily available DO use lettuceor not, as the mood hits. My family def. uses lettucethe kind is unimportant. My parents prefer iceberg, but my grandmother doesn't. . .my advice, though, would be not to FLOOD the salad with lettuce if you do choose to use it (as I do).

Agree with what Beety & others say about the dressing. My relatives around Sparta simply use excellent quality olive oil--they don't even bother with lemon, for the tomatoes provide acid enough. It's the most delicious thing I've ever tasted, but alas the quality ingredients here won't allow for the omission of lemon juice or red wine vinegar (which is also OK).

Guess what I'm saying is that it really isn't an exact science.

As for meat, really anything will go with a Greek salad. But I like the lamb idea if you're going for a Greek theme. But beef or chicken, or frankly fish (which is always my preference on a barbeque: a whole barbecued fish with a simple dressing of olive oil, lemon and chopped parsley and maybe chopped raw onions) would all work perfectly well with a Greek salad. Enjoy!

Popping in again, this time to be a know-it-all about the herbs. Davros, mint is used in a lot of Greek cooking but I think wouldn't be used in a salad ordinarily. Just oregano, salt & pepper. And chicpea, I could be wrong, but I don't think coriander is ever used in Greek cookingor, if it is, v. rarely. But of course there are so many regions in Greece and so many islands, that I'm sure each region does its own thingso maybe mint and coriander apply to regions I'm not familiar with.
