how do i make a moist chocolate cake?

whenever i have made it before it is a bit dry. does it make a difference whether you use cocoa powder or melted chocolate in the recipe?

the receipe I use (ultra easy) is a choc ornage one that uses marmalde (! but it works) and thats always lovely and moist

I have posted an Eggless choc cake recipe on here a few times - it is VERY moist, will try & find it.

there is a good one iwth condensed milk in it - that is always super moist -yum!

EGGLESS CHOC CAKE (v.v.simple)
Grease & line 2 8" Sandwich tins

Whisk together in jug: 8fluid oz milk, 4 fl oz oil, 1 tsp vinegar, .5tsp vanilla essence.

Sieve together: 8oz plain flour, 8oz castor sugar, 2oz cocoa, .25 tsp Bicarb Soda, 1 level tsp Baking Powder, .25 tsp salt.

Stir liquid ingredients into dry. Beat well with wooden spoon to a smooth slack. Pour into tins. Bake at 190 Degrees C /Gas 5 for approx 25 mins. Fill with buttercream, top with choc icing.

I use natural yoghurt in mine and it's FAB.

Also, keep the cake in a proper tin or container. Otherwise, it dries out faster.

okay, one of the best things about this cake is that you will have most of it in the cupboard, aside from choc and condensed milk.

225g sr flour
30g good cocoa
200g caster sugar
100g unsalted butter
200g condensed milk ( about half a tin, darn you have to make two!)
100g good plain choc
2 eggs

  1. heat oven to 180c/gas mark 4
  1. butter 20cm springform or two sandwich tins and line with parchment
  2. sieve flour, cocoa and pinch of salt into large bowl
  1. put sugar, condensed milk, butter and 100ml of just boiled water and choc in small pieces in sucepan and heat until melted (I do this in a low microwave)

5.stir melted stuff into flour and stir until glossy

  1. add eggs
  1. bake for 35-40 mins

There is then a recipe for a ganach but I had it warm from the oven with ice cream. It is all kind of gooey in the middle. YUM!

you'll have a whole trove

OK

ine goes

125g unsalted butter
100g dark choc in pieces
300g good marmalde
150 caster sugar
oinch salt
2 large eggs beaten
150g sr flour

preheat to gas mark 4 / 180

melt butter in a pan, when butter melted add choc. Leave for a few moments to start melting, then remove from heat and stir with wooden spoon until melted. Add marmalade, sugar, salt and eggs. Stir well then add flour bit by bit. Pop in tin for about 50 minutes

So easy and very little washing up too!

And no it doesnt tatse of marmalade, tastes of terry choc orange

need really good choc for ganache IME.

Go buy some green and blacks to make a ganache and stick the chocolate buttons in your gob.

Agree good quality choc, MIL makes cakes costing over £300 and never uses anything else.

ok just checking. i wasn't sure if it went hard iyswim so wouldn't be able to stick them in. usually use butter cream but fancied a change.

oh yeah - you can stick the buttons and smarties on the cake - I thought you were going to stick them in the ganache.

Grren and blacks ganache with smarties on? If I could spell i I would say it was scaralige.

that's what i was going to do. stick them in the ganache.

i usually make the cake and cover the top with butter cream then but the buttons etc on the butter cream.

but i wanted to replace the butter cream with ganache but wasn't sure if it would be too hard.

so yes or no will it work with ganache lol?

Yes, it will work with ganache, it doesn't get that hard. I second DimpThighs' suggestion, that cake is ace, and very easy to make.

I made Nigella's cake for DH's birthday this year with green & blacks choc and put choc buttons as decorations on the ganache - it was delicious if not a bit too chocolatey even for me

nigella's chocolate cloud cake, best choc cake ever.

uses melted dark choc, no flour, is egg based.

recipe is in nigella bites book if you have it or on her web site. its sinks in the centre when cooked but you fill this well with whipped cream. cake is yummy, not too sickly, just right. can't recommend it enough.
