I can make chocolate butter icing, I have a chocolate fudge icing recipe which is good but could be nicer... I want people to go weak at the knees when they taste this cake

when I'm icing cakes I jsut put a v small smidge in the middle to hold it together, jsut v thin
maybe use jam?

If you have used a basic vic Sandwich recipe, and not mine, then my suggestion is put normal chocalate buttercream icing in the middle, using lots of butter, little bit of chocolate drinking powder or make it green, dependent on who it's for.

Yup, I have used just a basic vic san recipe for choc cake so shall I just choc. butter icing in middle (just thin like you said) and then your icing on the outside or would that just be weird. The cakes are big (9" square) so I had to cook them for a reasonable length of time so I'm a bit paranoid about them being dry so I want a really tasty icing (was also thinking of doing a huge jug of strawb or raspb coulis to serve with it...not sure about that though, is it a bugger to make?!) Thanks for all the advice...oh and whatever I do need to cover them entirely with icing for decorating purposes! I've frozen them so I can ice them more easily.

1 - cocoa powder or real chocolate?

also UCM with that icing you mentioned can i put things like choc buttons and smarties on the top? i usually use butter cream you see.

Right firstly, Dances the icing mixture I told you about more than covers and 8" cake, so I would do just butter, not chocolate icing in the middle, what about creme fraich with sugar (caster) if you are serving it the next day. Not sure, I would have to consult my books for taht.

I haven't explained myself very well here.

If you have 2 Vic Sponges, then I would butter cream the inside but use a double portion of my icing recipe. That way it will fill in the side and be yumptious

The cocoa powder has to be just that, not drinking chocolate. I was absolutely disgusted with how much some cadburys cocoa cost recently. I am sure that other people do it, ie asda, tescos. but it has to be cocoa powder, you will know if you have bought the right stuff by dipping your finger in, it tastes foul

NappyAddict, sorry was off on a tangent so didn't entirely answer your question.

If you are going to make a really indulgent cake, then you should never use anything other then chocolate. If the recipe states that, then errrrrrrr no. I have tried many recipies with milk chocolate and they just dont' work.

Hey UCM! Thanks for all that. So, chocolate buttercream icing on the middle or just plain butter icing? Then your icing over the top. I think I need a hasty visit to Sainsburys this morning! What do you think about the coulis idea?

so plain chocolate not milk.
chocolate pieces are better than cocoa powder.

is that right?
