Cooking for vegetarian friends - recipe suggestions needed!

I have some friends over for dinner next weekend, and one is vegetarian. I don't really know what to cook for her. If you are veggie, what would you like to eat? What would you rather not eat? I'm not sure yet whether I will cook veggie for everyone, or also do a meat or fish option. I'm considering doing a curry, but I don't know if that is too lazy/boring? I'd love your suggestions, thanks.

Meera sodha’s biryani is lovely and a nice centrepiece if you decide to feed everyone the same meal. Nigella’s aubergine involtini lovely, but fiddly, recommended if you’re only doing a couple of portions.

Just noting that Parmesan contains calf rennet and so is not veggie.

Or if you decided to cook Indian, you could do a selection - saag paneer, Dal, etc and it would be up to you whether to include some meat dishes obviously. Curry is very easy to prepare in advance and reheat on the day. Can't go wrong with any Madhur Jaffrey recipe and ensures it feels special not just like a takeaway curry Smile

curry sounds lovely.do It with all the nans pickles side bits is brilliant friends over meal.
ive done this miz with huge success.a leek,garlic onion,parmesan stock base.then make into a pie/tart.crumble. split in half before though and then mix a mixture of chicken and bacon mix throughhalf of it. if you wish.but good on its veggie own.then ensemble as crumble,pie,tart.
a really good veggie lasagne is good for all.
chickpea tagine.
veggie stew with herbie dumpling.then depending on whethe ryou want to serve some oven cooks chicke thighs and chorizo miz one the side for meat eaters.
veggie jambalya with option fish on side or chicken.

Well I like goats cheese, mushrooms, risotto and curry . I liek the Mexican idea a lot. I would add that if you go down a rost meat or fish with veg route, make sure the vegetarian option goes with the accompaniments as veggies still like roast spuds etc. My worst ever dinner was cheese and onion quiche with roast potatoes and gravy and brusells sprouts - blurghhh. A vegetarian pie or wellington works well here.

I agree about having a ‘theme’ then doing meat and veggie dish plus sides that will suit everyone. I did that recently with an Italian menu. Sounds terrible ‘70s but was fine in reality!
Aubergine parmigiana for veggies (there’s so much cheese that the aubergine is largely disguised for those who aren’t keen), chicken cacciatore, rosemary pots and big heap of greens. Yum.
