Is cauliflower cheese a meal?

I will be going back to work when DD is 6 months and also have a 2 1/2yr old DS so I need easy dinners theyvcan both eat. DD will be fed finger foods not puree/mash

I usually do mixed veg rather than just cauliflower (usually carrots, courgettes, brocolli, spinach & afterwards add uncooked red pepper) I put the pan on with the steamer and add them in that order. Then make Easy Cheese sauce (double cream & pre grated cheese, ground pepper & mustard powder). It’s good for reaheating too.

I fry and onion and little bits of bacon and add to our cauliflower cheese, and we tend to have it with a jacket potato.

Chicken everything was finger food with DS: lasagne, chicken pie, tagine. She will probably eat in her vest quite a lot due to the inevitable mess Grin

It's a fantastic meal. I could quite happily polish off a plate of just that. DH however needs sausages with his.

I only discovered it as a side dish a few years ago when I went to a Toby Carvery for the first time and discovered it as an accompaniment to roast dinners. DH then told me that growing up it was definitely a side dish. So we do both now but I much prefer it as a meal.

Watching this thread with interest as being the sad, tragic exciting couple that we are, DH and I have debated this on more than one occasion. I am firmly of the opinion that it’s a delicious meal, although I do like a bit of salad or if I’m feeling super fancy maybe some garlic bread. He disagrees and thinks it’s a side for a roast! Some great ideas for how to pimp it up on here though.

Ylvamoon Brought back memories there - mum's chopped up cauliflower cheese rolled in pancakes and covered in cheesy breadcrumbs was one of our "magic, makes you feel better" foods as kids.

What about omelettes - usually have them midweek with some new potatoes or chips. Easy & yummy, although I must admit my 2.5 won't touch them 🙄

DS is funny with egg, sometimes it’s fine sometimes it’s yucky.

I’ve got eggy bread and beans on the list though. They will both eat proper dinner at lunch at nursery and Tea mid afternoon so doesn’t need to be a big meal.
