Homemade tomato soup recipe?

My mum makes a Delia Smith one that is Devine. Tomato and basil I think. I've just made parsnip and celeriac, but I doubt that's helpful. Grin

Roast whole tomatoes with garlic, basil, oregano, chilli, whatever you like. Remove the skins when they are mushy. Add tomato mix to sauted onions and whatever other veg you want. Add a bit of sugar. Blitz in food processor.

I used to have a Pru Leigh one with bacon made with fresh (skinned) tomates. Here is my vegan "cream" of tomato - very easy:
1 tin tomatoes
1 tin butter beans
1/2 tin water
2 tsp veg boullion
1 x chopped onion

Simmer for 15mins and liquidise

Finely chop and fry an onion in oil of choice. Add chilli flakes to taste. Add stock of choice. Add tinned chopped tomatoes (I like the ones with added herbs) of choice, or chopped fresh tomatoes. Finally add red lentils if required. Cover and simmer on low till lentils have cooked.

You can leave it like that if you like chunky soup, or you can blend.

This is my basic tomato soup recipe. You can leave out the chilli flakes but personally I like some heat. You can replace the red lentils with green/brown lentils or finely chopped carrots. Or leave out altogether and just go extra heavy on the tomatoes. Fresh basil torn over as you are about to serve.

One bag (about 7 approx) value tomatoes.
One red onion.
Olive oil
700 - 800 mls of stock made with two veg oxo stock pot thingies.
salt and pepper
basil

Chop toms and red onions into quarters and put into a baking tray with raised sides. Drizzle over a good slosh of olive oil. sprinkle with sea salt and black pepper.

Roast for about 20 to 30 mins till onion is soft.

Throw whole lot into a big pan with stock. Add basil. Add more salt and pepper if needed.

Simmer for 20 mins. Blitz with a stick blender or put through a food processor.

Thanks, thenightsky...that recipes reminded me of one I'd forgotten about...the one I had also had the addition of balsamic vinegar and whole garlic cloves when roasting the tomatoes and onions. Thanks for reminding me. I have a yearning for homemade tomato soup and chip butties for tea! I blame the weather....

Also, do you reckon it'll be ok to use dried basil? Would normally use fresh but am not keen on doing battle with the snowdrifts outside to get some!

I make the one out of Tom Kerridges Best Ever cookbook. However I do not use the red wine vinegar I substitute it for veg stock. The twice I've tried to follow the recipe and use the red wine vinegar I've been told I've made 'Vinegar Soup' and I've had to tip it away. I also don't bother making the basil oil to drizzle on it.

The tomato soup is lovely though.

I make this Mary Berry one loads, and everyone loves it. It uses tinned tomatoes, so really easy and I always have the ingredients in. It actually tastes quite like Heinz.

Just wanted to thank you all for responding with suggestions, especially thenightsky for reminding me about that recipe. Made enough for last night's tea and lunch today - it was LOVELY...plenty of extra balsamic stirred in at the end. Highly recommended!
