1/2 tin coconut milk

Can anyone suggest what I can do with a_^* leftover half tin of coconut milk? Don't want to throw it away!

It's the Caribbean choice kind which I wouldn't recommend, it has a sickly floral scent/aftertaste to it so when making green curry I had a lot left.*^_

I also don't know why everything is formatted. Ignore my ineptitude today!

Add about 100ml of regular milk or water and warm it in a saucepan. In a large heatproof dish (like a Pyrex bowl), mix a heaped teaspoon of cornflour with a little cold milk or water until it forms a paste. Then pour the warmed coconut milk on top and combine it with the cornflour paste. Leave to cool and you have some coconut blancmange.

freeze it or bake with it, it's not so sickly imo in cakes.

You could also mix the coconut milk with 100ml water and some chia seeds, then leave for at least 4 hours (or overnight) to make some chia seed pudding. Add fresh fruit such as berries when you serve it.

It goes well with lime jelly, whisked into the jelly at liquid stage. Makes a nice creamy pudding.

Freeze it. I have a couple of dishes that only use half a tin so always freeze the other half.

I only ever use 1/2 can at a time and set the rest of the can in the freezer, but if I did have to use it I'd put it in smoothies or make a chia seed pudding.

I freeze it, in ice cube bags, then just pop the cubes, as many as I want, straight in to curries. No defrosting and I've not killed us yet so I assume it must be okay.
