What can I do with a butternut squash - no rude answers please!!!!!

The last time I bought a butternut squash was when I weaned my DD on Annabel Karmel's instructions!
I decided to buy one the other day and now (apart from cooking it and pureeing it) have no idea what to do with it, or what it tastes like...I didn't even lick the spoon when feeding my DD!

I asked my DH what to do with it, and got a request that I can't bring myself to post!

Peel, scoop out the seeds, chop and roast - on it's own or with other vegetables - delicious.
Also as above, add a little better, wrap in foil and BBQ - also scrummy.

make soup! or roast it like a potato with a roast dinner, you can also slice it and fry it like chips, makes gorgeous wedges with a spicy salsa or cool yoghurt dip, basically follow recipes for pumpkin
And next time buy a Kabocha Squash, one taste and you're addicted

Cut across the fattest bit, scoop out the gubbins, put in some butter and brown sugar, and roast.
Peel, boil and mash the remainder, with butter.
It takes less time than potato to boil and roast, but otherwise cook the same.

Pop it into the oven, whole, at about 180C for about 1h or until it is soft to the touch. When you serve it (hot or cold but nicer hot) slit the peel lengthwise and peel away to either side, then cut slices across the long thinner part and serve with a knob of butter. Very yummy, vaguely chestnutty. Can add brown sugar and cinammon and call it pudding, or salt&pepper and call it vegetable.

Butternut squash is also an excellent ingredient in scones. In Australia we call them pumpkins and pumpkin scones are well known. You can also make pumpkin pie, but I don't think it would be calorie friendly.

And it is a great mashed alterntive to neeps if you are having haggis.

After scooping out the gubbins, you can just rinse the seeds (throw away the stringy bits) spinkle a bit of salt on the seeds and either roast, dry fry, or cook in the microwave for a nice lightly salted, crunchy,(relatively) healthy, snack.

chop up, cover in olive oil and salt and roast in the oven - very tasty. Or you can do a nice thai curry - just mix thai curry paste, bit of lemon grass and coconut milk. Chop BS into chunks and add to the sauce with green beans. Cook for about 20 mins. serve with rice

roast it in big peeled chunks with a whole chicken, onions, peppers, sweet potato, lots of olive oil and lemon juice. The vegetables around the chicken which you baste load with the juices.

we chop it into chunky slices cover in oil griddle it until scorched both sides then put in oven with honey and more oil and roast. AMAAAAAZING.
