We have fajitas once every couple of weeks - and I would like to make the flour tortillas myself instead of buying them.

Does anyone have a recipe and instructions??

Copied this out of a friend's cookery book ages ago. Haven't tried it yet. Let me know if it works.

FLOUR TORTILLAS
2 ½ cups white flour
1 tsp salt
5 tbs lard
2/3 ? ¾ cup warm water

Mix flour and salt. Rub in lard. Add warm water and stir with a wooden spoon or knead by hand to make a firm putty like dough. Shape the dough in to a ball, cover with a damp cloth and let to stand for 5-10 mins. Divide in to 20 small balls. If using a tortilla press (or a chapatti press): slit a clear 6 inch plastic bag along two sides and open out flat. Sprinkle with little flour, put a small amount of dough on one side of the plastic and flatten it out gently with one hand. Fold the plastic over the top and put the whole thing in to the press. Push the press several times until the tortilla is the required size. Remove and reserve in the bag until ready to cook. If using a rolling pin: Put the small ball of dough in to the bag as above. Gently roll out the tortilla with a rolling pin, turning the bag by one turn with each roll until the tortilla is an even circle. Heat an ungreased heavy bottom skillet over moderate heat. Pull off the plastic, put the tortilla on your open hand and transfer to the hot skillet. Cook for 30-45 seconds then turn over to do other side. Keep warm by wrapping cloth and putting in a lidded basket, or keep warm in foil in an oven, reheat in a steamer or wrap in film and reheat in a microwave for a few seconds.

Thanks Burek! I had no idea LARD would be in there - naive of me wasn't it!! Don't keep lard in the house, but will get some to try! Thanks again

know what you mean! not something I keep handy either! there might me a substitute you can use though - try googling it?

I expect you can use shortening instead.

you can use butter(yum), margarine (regular or white) or cooking oil instead. you can use olive oil if you want.

it will take more olive oil than lard.

Hi Ready (and burek),

that's exactly like the recipe I use. Works well with butter and I do not use the bag when rolling, just put some flour on the counter and use the rolling pin.
