Help me bulk this out please!

So DH took chicken breasts out the freezer yesterday for dinner today and they're tiny! i need to feed the two of us plus DD's (6yrs and 2yrs). Was supposed to be making a korma but it's not going to be enough. Anyone got any quick, easy recipes that I can use to make this into a good, filling meal. I have tinned tomatoes, lentils, potatoes, carrots, onions, peppers some broccoli, garlic, rice, pasta and an array of dried herbs and spices. Anybody? I'm usually good with these things but just drawing a complete blank. It also has to be dairy free due to allergies!

Could you not just do a chicken and vegetable korma? Use onions, potatoes, broccoli etc to bulk it out. Or a pasta bake - cut up the chicken into small pieces and use onions, garlic and tinned toms to make a sauce. I’d add the broccoli to that too!

I agree with foodiemama and would add lots of vegetables too - soften the onions off first before adding the chicken, and then add the other veg. If you still think that wont be filling enough you could bulk it out with red lentils - they cook quickly (especially if you boil them separately and then add) and go very well in curries.

That really should be filling enough for 2 adults and 2 children (especially if your youngest is only 2). Even if the chicken breasts are miniscule, think of it as a vegetarian meal spiked with meat!

Or, you could do a chicken and vegetable Korma as above with a side of spicy, oniony fried potatoes which would be delicious. Maybe try parboiling and draining the potatoes, fry the onions until they begin to soften, then add the potatoes to the frying pan until they begin to go all lovely and brown, then add chopped garlic and any spices you like (cumin or garam masala would work well and aren't too hot) and fry for a bit longer until everything is all lovely and lightly browned.

Add lentils and buy a naan bread or chapatis. I personally love toast with a curry...

I don't mind using loads of veg, I almost always use loads of veg but not so much in a korma which is why im thinking it won't work. You'd also be really surprised the amount we all (especially 6yr old) eat portion wise. None of us are overweight but we like a big dinner! I do all the meal planning and the vast majority of the cooking in the house so i think I've just run out of ideas!

I'd do a Korma as planned, add a red lentil dhal, onion bhajis, and potato aloo? Turn it into an Indian feast. You don't need loads of meat to have a big dinner.

Adding red lentils will bulk the sauce out a lot. You could make a chicken dhansak instead, which is chicken and lentils.

I know you can't exactly follow this recipe as it has dairy in it, but it shows that a Korma that is mainly veg can work!

I'd do something a bit like this with the potatoes, but a cheaty, easy version which doesn't involve faffing around with lots of spices. If you don't have any mild spices in the cupboard then just onions potatoes, garlic, salt and pepper would be nice. I love fried potatoes and onion though!

How about a chicken hot pot, chunks of chicken, carrot, onions, broccoli and a few herbs in a thick chicken gravy with sliced potato on top, all baked in the oven.

Kind of took inspiration from a few posts here, all the recipes looked amazing so thank you! I've done a kind of 1 pot casserole type thing with chicken, potatoes, onion, pepper, brocolli, carrots, peas, tinned tomatoes and a chicken stock pot. Added some garlic, mixed herbs and a slug of lea and Perrin's for flavour. We'll have it in a wee while with some garlic bread. DD1 gave it the taste test and said it was amazing so looking forward to it! I'm saving a few of these recipes for the next few weeks though when I've got better non dairy alternatives to make some of them.
