Mince pies in advance

I know Christmas is over but I want to ask this before I forget. I want to be organized next year and make my mince pies in advance (I live abroad so I have to make my own). Can I make them and then freeze them? Should I freeze them after assembling them but before baking them? Or freeze them after baking them? Or is my only option to freeze the pastry and assemble them after I defrost it? Tia!

Yeah you can freeze after baking, they're perfect. I ate some last week that were frozen last Christmas, were still yum Smile

You can do any of your options. I found it easiest to assemble them in the tins and then freeze uncooked until solid. Then take them out of the tins and pack into a Tupperware box to store in the freezer.

I've had slightly better results with freezing them uncooked personally but have both done both methods before now.
