Desperately seeking healthy food!

I am craving healthy nutritious meals after eating rubbish for days - any inspiration for healthy hot meals? I like anything lentil or fish based, and am stuck in a bit of a rut.

Are you pescatarian or do you eat meat?

For fish, any white fish or salmon on a tray with veg, small amount of butter and herbs (e.g. dill, parsley) on the fish, bung in the oven until fish is cooked.

Fish parcels also an option - put fish in a tinfoil parcel in the oven and serve with veg.

Meditteranean veg is also meant to be nice - roast veg such as peppers, tomatoes etc with balsamic vinegar.

I make this a lot. It’s really easy, quick and delicious. You could serve it with a piece of fish, grilled paneer or add a tin of chick peas for a different texture.

Hi, if you have a slow cooker , there are lots of choices. Go on Slow Cooker Central. E.g. roast chicken pieces which you can do dry or any sauce then add to pasta or risotto or eat with salad sandwich. We do lamb , beef or pork in stock add cubed potatoes , root veg. Can do any fish or make frittata add any thing like peppers, tomatoes, spinach, courgettes. Often do quote Bolognese or Quotn shepherds pie. For quick snack any fresh or tin fruit in natural yoghurt. Can do mash potatoes and freeze and same with homemade pasta sauce too.

Sorry just realised no meat. All the above can be substituted with lentils, chick peas, Quorn and vegetables plus soups are easy up make especially lentil soup.

Generally, vegetarian or fish dishes aren’t that great in a slow cooker though.

Thanks for the replies, I will definitely make the fish parcels, spinach dhal and the cauliflower curry!
I do eat meat but feeling a bit melted-out after Christmas.

love a good bowl of pearly barley stew.cook down some garlic,onions and peppers.add splash of white wine optional,and either splash of worcestsihire sauce or white vinegar. add stock a shaking of gravy granules. and cook pearl barley.such a warming delish tasting bowl.you can then serve with fish or meat or just on its own.
big veggie curry.cauliflower.green beans,brocoli.sweet potato and baked potatos.tinned tomatos and you can either add ur favourite jar or make your own spice mix into it.we do both.serve with rice and naans.
fresh salad pasta.cook pasta. then into the cooked pasta whilst wamr is a must add some chunks of tomato and celery and chicken or tuna and mix. the falvours are so simple but go really well.eat as lunch over next few days
make a base of red onions.tomatos.peppers.jar of dolmio or similar sauce.saute down a bit til desired thickness.add bacon or chorizo if desired. then serve with toast.jacket.rice or pasta.goes really nice over some packet tortilini.add butter beans or mixed beans pulses to make into any dish you like.
leeks haricot beans and peas braise in stock and serve topped with fillet of salmon and new potatos. or make bigger batch and add in chicken thighs to the cooking for a light fresh stew of sorts.

I’ve just had sweet potato, tuna and chilli fish cakes, oven baked s.o pretty healthy and delicious.

Gwyneth Paltrow’s first cookbook is really good, somewhat to my surprise, and is quite easy to find in discount bookshops etc. Lots of healthy choices there although not necessarily v cheap to make if that’s a consideration
