I have just been to our first famrers market and bought some delish looking red onions. I want to cook them so they are sticky and will make a sort of warm relish.

They are to accompany the turkey sausages, bacon and mushrooms I bought, all served with some lovely ciabatta.

Thanks

Dont know what its like but have found this one, does look nice

2 large red onions -- peeled and very thinly sliced
1/4 cup firmly packed brown sugar
1 cup dry red wine
3 tablespoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper

Combine onions and brown sugar in heavy nonstick pan. Cook, uncovered over med.-high heat about 25 minutes or until onions turn golden and start to caramelize. Stir frequently.
Stir in wine and vinegar. Bring to a boil over high heat, reduce heat to low and cook for about 15 minutes until most of the liquid had evaporated. Stir frequently.
Season to taste with salt and pepper.

The other day we had turkey sausages done in the oven and I put quartered red onions all around them in the dish and roasted , they were a dream!

I'd just melt some butter, add some brown sugar and slice the onions v.v. thin, then fry them at a very low heat with the lid on for at least 20 mins. I normally then put them in a pastry case to make a flan, but to make a relish, you may want to put something a bit tangy in - 1 tbsp mustard would do the trick.

mmm Balsamic vinegar goes brilliantly with red onions.

Thank everyone, I thought it would be fairly straightforward. Need to make them taste good to jcompensate to DH the flowers I bought myself as well
