I watched You are What you Eat on TV the other night and the doctor lady made the family chick pea burgers (we didnt see her make them), they had 3 kids who had lived prety much solely on junk food and they loved them. I just wondered if they are really as nice as they made out them to be and if anyone has a good recipe which their kids like. ive never eaten chick pea burgers before so dont know what too expect. She said they are dirt cheap to make which makes them even more attractive if they are nice. Ive looked on the website for her recipe, but no luck and will check out the book next time I somewhere that sells it, but in the meantime......

Ooohh jsut deliberated buying this in Books Etc in Liverpool St - but I didn't so can't help you - but make sure you have all the windows open after feeding your family chick peas you will have the parps for ages after!!

happycat · 22/07/2004 14:37

I copied this from the book they are the only burgers in there and can be made with chicpeas so I am guessing these are them

Falafel

Finely chop generous handful of parsley and coriander (can do one or other if you don't have or like both). Finely chop 3-4 spring onions.

Take a tin of chickpeas, drain, rinse and spread out on a tea towel to get rid of all excess water. Process in food processor until very smooth (you may want to keep back a handful and add towards the end so that some is slightly rougher). Gradually add: pinch cayenne or chilli powder, tsp ground cumin, tsp ground coriander, 3-4 cloves garlic crushed, 1/2 tsp baking powder, and salt.

The paste should hold together quite well, but still be fairly fragile. Add the parsley/coriander and spring onions and process just enough to mix them in. Then leave it to rest for an hour or so.

The paste is too fragile to make balls and pick them up to put into the pan, so use a couple of large teaspoons or small dessertspoons to scoop and shape the balls and drop directly into the pan. Deep-fry until goldy-brown, then drain on kitchen roll. I think they can be shallow-fried, but then they would need to be turned. They can be eaten hot or cold, and can be reheated in the oven. They keep quite well in the fridge.

Is the book worth buying?

Piffleoffagus · 23/07/2004 10:06

i eat lots of falafel already, the chickpea burgers were a different thing...
hmmmm looked like grated onion carrot and mashed chickpeas with seasonings.. lovely with yog and mint sauce or thai sweet chili dipping sauce...

happycat · 23/07/2004 23:17

Depends hercules I think it was but it cost £13 depends on your tastes I have only read a bit and am finding it interesting

MISO is fermented Soya beans and barley, rice or wheat. It is extremely nutritious, being rich in protein, minerals and some B vitamins. Genmai Miso, which we stock at Daily Bread, is made from Soya and rice and therefore is gluten free.

Use miso as a stock for soups, sauces, stews and casseroles as flavouring. Miso is best added near the end of cooking a dish.

They've got it in ASDA (£7.99 I think), although they didn't have any copies left when I was in the other day. I like the programme.

Made falafel last night after reading this thread. Lovely with baked mushrooms - the huge ones - and roasted chopped red oinions with some brown sugar sprinkled on top. Put sour cream on top of the mushrooms, then the onions on top of that and then teh falafel on top of that. Hungry again now just writing it.
