Can somebody tell me how to cook sauteed potatoes?

My hubby loves them, though I'd suprise him with some tonight as it his birthday!!

you can just deep fry raw potato cut into chunks or you can fry already boiled potatoes.
for the raw spud method;
in a wok or deep fat fryer put about a litre of oil.
heat oil and cook the potato chunks until soft but not coloured. remove and drain.
heat the oil until really hot(smoking)
refry the potatoes for about 3-5 minutes until crispy and golden

for the cooked potato method:
boil some potatoes with skins on for about 20 mins.
drain and let cool.peel off the skins( or you can leave them on if you like)
cut the cooked potato into slices or chunks
shallow fry until golden in some oil with a copped up clove of garlic. do them in batches if you are making lots as too many in the pan will cause them to fall to bits.

I think saute potatoes are not deep fat fried. Here is my version:
Wash new potatoes and slice them into either thick slices or chunks (whatever takes your fancy). Add to a saute pan 2tbsps of olive oil and a good chunk of butter (I also add a couple of cloves of crushed garlic but optional) and cook over a medium low heat turning occasionally. Sautee for about 10 - 15 mins. Just before the end of cooking turn up the heat a bit to crisp them and I throw over a handful of freshly chopped parsley or chives or basil or whatever will compliment whatever I am cooking but just salt and pepper or nude will do just as well.
You can also use old potatoes but I would peel them before sauteeing them.
Do not pre boil potatoes as the starch in the potatoes helps them keep their form - preboiled just turn too mushy and absorb too much fat!

I agree with Caroline, her way will work very well, but you can par boil them and sautee them at a higher heat for a shorter time which is a little healthier as they absorb less oil.
