What should I bake? I need ideas NOW!!!!

It's the school bake sale on Tuesday. I'm in the US & Thursday is Thanksgiving. The bake sale will be a mixture of over-sugared excited kids shoving their grubby dollars at people as they gather armfuls of cookies & cakes to gorge themselves on, and parents with about 50 million relatives wanting a slap-up meal and endless coffee & cake for the long weekend.

I try not to bake too much as a diet of sugar & carbs apparently isn't considered healthy these days. So this is a good excuse for me to indulge my baking goddess. there's a REALLY good baking supply shop about 30 minutes from here that closes at 4 (currently 10) but I always spend $$$ so I should go with a plan. The store is then shut until Tuesday so I have to buy equipment today.

Any baked goods need to be wrapped. My thoughts so far are:

Pretzel sticks dipped in chocolate and covered in sprinkles. Always sell well.
Oreo cookies given the chocolate & sprinkle treatment.

These 2 great for kids, and can be made in advance.

Cupcakes - harder to transport. Everything here is 'pumpkin spice' flavored at this time of year. Although I can imagine that chocolate cake with choc frosting would sell well any time of year.
Sugar cookies with festive decorations. Fun to make but time consuming.

A big cake, that some desperate parent will buy to feed the masses with.

The bake sale at our school is HUGE. It raises thousands of dollars and the kids go completely crazy (they are also about to have a 6 day 'weekend' with family and feating. It's very like Christmas but no gifts.)

What do you suggest I make? I can't make up my mind.

I was going to suggest pumpkin or pecan pies so that people could eat them over Thanksgiving?
Gingerbread men/women/animals are always good too.

Make them and slice in half spread with jam fresh strawberries and cream always a big hit at our cake sales

Christmas day we are making a big chocolate cake covering it in chocolate cream icing then sticking maltesers around the sides and pofieroles all ontop.

Lemon drizzle.

Rice crispie cakes.

these are the ones that always sell well in my experience.

Also peppermint creams and coconut ice always go well, and you can prepack them in little bags so they look pretty, transport well , and are safe from poking little fingers.

Fifteens, chocolate caramel squares, rice crispie/cornflake buns and gingerbread men are popular as the children go for them rather than the adults here.

I made this the other day but without the almonds and mastic. No eggs, flour or butter needed.

It is delicious and even better the next day.

Jamie Oliver's Chocolate Orange shortbread is lovely and very easy to make. I also make Cranberry and white chocolate cookies a lot at this time of the year.

Americans wouldn't know what coconut ice is! I made it for friends once and they kind of stared at it and politely took a small nibble!

Butterfly cakes are a genius idea. Again - no-one here knows what they are but they're cake so will still go.

American style scones are an abomination. Fit only to be served with the CF tea-maker in another thread (which is exactly how Americans have their tea).

OK - so - butterfly cakes, maybe some carrot cake (with pumpkin spices).

And I may just do a load of choc. covered pretzel sticks etc for the kids to gorge themselves on.

Flapjack. There's a fab gooey recipe on here somewhere. I replace some of the board with seeds. Yummy

I made this.... www.bbcgoodfood.com/recipes/2147637/mary-berrys-gingerbread-cake this weekend and it was delicious. I made a large star shaped cake and also cupcakes. The cupcakes where nicer as they were more moist but the star cake looked amazing. Gingerbread is very seasonal and also a bit British I think.

flapjack another thing that never made it across the Atlantic.

The only disappointment is that no-one's come up with a suggestion that provides the excuse to go to the specialist baking store. Probably a good thing, as I never get out of there with less than $100 spend. DH will be relieved.

My idea needs the store! I got my star shaped tin at TK Maxx but I am sure you could get a nice expensive one at the baking store :)

You are seriously underestimating how much stuff I already have.

I could make a few hundred cupcakes without needing to buy a thing.
